How to prepare an orange – Jamie Oliver’s Home Cooking Skills


so we’re going to prepare oranges like
you do them for a salad or for like a
fruit salad so into segments or slices
so grab an orange one and then cuz it’s
round obviously it’s rolling all over
the shop what you want to do is you want
it to sit nice and firmly on your board
so we take its heel off and its top off
and then starting at the top you’re
gonna put your blade in and then you’re
going to follow around the shape of the
orange soaring down and then tucking it
back under following the shape to take
your strip of peel off keeping your
fingers on top and getting rid of all
this white stuff the pith cuz that’s
bitter we don’t want that you want to go
down to the flesh like this
try keep it flat on the board so now
we’ve got most of our peel of the orange
we want to just go round again and trim
the bits that we missed that leave these
white bits cuz that’s the pith and
that’s bitter and we didn’t want to eat
them yet perfect right perfect
so then we’re ready to take the
segment’s and if you look around you see
these lines going down the orange each
each each line is a piece of skin that’s
separate like you know when you eat an
you peel an orange to eat and you pull
it apart and its segments that’s what
that is and that’s not so it’s fine to
eat but it’s not so great to eat if you
want the really nice soft juicy bits
that were making the effort to get so
we’re going to cut them out till you
want your bowl Roy grab your bowl and
we’re going to cut over a bowl because
then that catches all of the juice that
you might lose so you look for the lines
on your orange and then you put your
knife just ever so slightly to the side
of one and you gently saw down towards
the middle of the orange but gently
gently gently and the same the other
side and then you can just pop out a
little slice of are you use the tip Ian
ah
that’s it tease it out bring these lines
game down your orange you put your knife
just to one side of one you pick a
segment you put your knife to the side
then you follow it down soaring with the
tip as you go down but making sure you
don’t go too far you just go into the
middle of the orange back to the top
again and down the other side or another
way you can do it is if you’ve got your
orange to that point
he’s peeled it you can always just cut
it in nice rounds that look really nice
– that’s it had two segments an orange
done
