hi welcome to watchmojo.com my name is
Elliot Cohen I’m a caterer and cooking
instructor and today I’m going to show
you how to make grilled bananas with a
honey rum glaze and chocolate sauce so a
lot of people don’t think about using
the grill BBQ for fruit but it’s a great
idea because there’s sugar in all fruit
and we can caramelize that sugar want to
stick to fruits that are firm we can
apply the marinating technique that we
use for fish and meat and chicken with
fruit we can use fruit juices and
liqueurs like rum to marinate bananas
and pineapple and they’re very very nice
on the grill okay the important thing
about grilling fruit is you want to keep
the heat on medium you don’t want to get
up too high you don’t want to burn the
fruit there’s a lot of sugar and fruit
and we want to be mindful of that so I’m
going to take these sliced bananas and
very very lightly I’ve got a little bit
of melted butter here in a basting brush
and I’m just going to coat them very
lightly and then I’m going to just lay
them cut side down on a medium grill and
by keeping them in the peel will prevent
these bananas from getting too soft and
you want to start with a banana that’s
ripe and a little bit on the firm side
so we’re going to cook this dessert with
the hood of the grill up because we
don’t need high heat so in this saucepan
I have equal parts dark rum and honey
and a sprinkle of cinnamon and I’ve just
whisk them together and I’m going to
just take a look at the bananas now some
grill marks on them and now I’m going to
take my glaze give it a stir and I’m
just going to give them nice brush you
don’t want to turn the bananas over
again because the glaze will burn so you
can be generous with this to go over
them a second time now our bananas are
nice they’re getting soft but not too
soft and I’m going to bring them up to
the second level upstairs here now we’re
going to make the quick chocolate sauce
very very simple we’re going to use a
cup of heavy cream 35% cream and seven
ounces of chocolate chips so I’ve got a
saucepan on the grill using the grill as
a heat source as I would my oven I bring
the cream up just to a simmer we don’t
want to scald it or burn it move it over
to the cold side and I’m just going to
drop my chocolate chips into the cream
and with my whisk I’m just going to
incorporate these two ingredients take
about 30 seconds I recommend that you go
with bittersweet or semi-sweet chocolate
chips and that’s as easy as you can get
and what I want to point out now is a
bananas are soft they’re sitting an
appeal which is going to help us lift
them off the grill but we can no longer
use tongs because we will squeeze the
bananas and they might fall apart on us
so we’re going to use a small spatula
sometimes called a fish spatula and
we’re just going to lift the bananas up
like this and slide them onto our little
high plate here
well I like that
you
