to share with you ideas aspire
and as far as food is concerned I think
we all believe and know the dictum you
are what you eat you are how much you
eat you are when you eat I think we
resonate resonate with that however I am
going to add you are what you do not eat
and I will explain to you when I say
what I mean when I say that
how is it that with so much information
today about food about nutrition about
diets all over whether it’s a newspaper
whether it’s a magazine a television
show devices applications trackers
information on food with so much
information much more than our parents
ever had or grandparents for that matter
we are still struggling with a burden of
nutrition related diseases like never
before that’s something to think about
so are we getting more knowledgeable but
more sick perhaps yes we are seeing
things at unprecedented levels what is
disturbing is longevity longevity we
have had every generation outlive the
previous generation never before has
have children had a shorter lifespan
than the adults than their parents it’s
never happened in the history of mankind
of evolution and this is a prediction a
projection by a public health expert at
Yale that this generation of children is
going to live shorter lifespans than
their parents mental health
w-h-o has declared depression as a
number one cause for ill health in
disabilities today 2017 was the year for
mental health and depression dedicated
to this why since the 1990 since of the
last a 2005 to 2015
depression has gone up 18%
and we are a society which is
about affluence surplus there is so much
more today
food allergies from 1997 to 2011 food
allergies have gone up by almost 50
percent this is according to the Center
for Disease Control and Prevention in
the US so what’s going on and that’s
what I’m here to share with you whatever
my learnings have been
with information overload and the burden
of disease we still are not able to
handle our food perhaps there is an
addictive component in food just like we
have tobacco just like alcohol perhaps
this is application this is applied here
as well food does actually and
scientists have now filed found
addictive components in sugar just like
cocaine in wheat called luteum morphine
which they actually stimulate the opioid
centers of our brain just like drugs –
and sometimes even more potent than
drugs – so we are unable to control our
food intake despite the knowledge that
we have about food and were still there
are issues some of the food elements
have been designed by food industry to
make them addictive and what are all
these addictive things and the changes
in food supply doing they are also
affecting our digestive system our gut
and where most of the hormones which
regulate our food intake get disturbed
we are all born with innate checks and
balances to tell us when to eat and when
to stop eating and the best example is a
baby you cannot feed an extra drop of
food a drop of milk or food to a child
because his sensors are in play but
thanks to perhaps what we are eating we
have lost those checks and balances but
the beauty is the body is forgiving and
we can get them back so what is how
the gut what is the food that we are
eating some of this changes in the food
supply what are they doing to our gut
they’re causing what we call
inflammation inflammation is nothing but
fire literally fire and when we have an
inflamed gut we are opening a whole box
of things which are affecting us in so
many different ways right from an
epidemic of malnutrition we see this
paradox malnutrition with obesity so
while we are eating too much
we are also eating nutrient poor food
processed food and we’re also perhaps
not picking it up thanks to the
inflammation in our gut the new word has
been used very commonly in this field
called the leaky gut
quite literally it is a leaky gut
thanks to the inflammation the cut
surfaces which are really the absorption
surfaces of food are not doing what they
are supposed to do they are not picking
up the nutrients and also allowing the
passage it’s a barrier function that the
gut has it’s not allowing the it’s
allowing the passage of food undigested
food and toxins across causing the
formation of antibodies and these
antibodies are leading to ill health
it’s called intestinal permeability and
today it’s not only about the gut being
leaky it’s also now thanks to these
antibodies traveling to the rest of the
body we are calling it a leaky brain and
you can actually see
that we are like I told you that we are
witnessing a huge burden of mental
health diseases right from depression to
dementia to Alzheimers and so on and so
forth
haven’t we all heard in traditional
conversations Jess are on where some
money and that’s really applicable here
the grains that we are eating are making
us be different people where Sahiban and
depression is one thing I’ve been
talking about
we actually have no business to complain
about depression in the affluence but
the fact is that we are suffering not
only because of our brain we have this
is a new finding a second brain in our
gut the gut has neurons and cells just
like the brain and the number is so huge
the scientists are now calling the gut
the second brain and any disturbance any
inflammation any problem where your gut
is not healthy it’s not surprising to
find the kind of things that we are
talking about
the gut has more to do again a recent
understanding the immune system
almost all practices of traditional
medicine whether it was a Aveda or
Chinese medicine or a naturopath or even
a homeopathy if you went with a headache
or a pain they would first ask
Hasmik SI hey how was your digestion
however we in modern science lost that
connection we didn’t believe that but
the fact is it’s true that two-thirds of
our immune system sits in our gut it’s
so easy to join the dots it’s so easy to
actually change people’s lives through
their diets by just simple elimination
and substitution and that’s exactly what
I have been doing in my practice I have
a case study here to share with you
there are several of them this was a 56
year old girl lady who came to me
completely at the end of the road
she was been given an appointment by the
doctor her treating physician for
bariatric surgery and she panicked
because she was at the end of the road
as far as the medicines were concerned
her insulin levels were the highest they
couldn’t increase them further nothing
was in control she had reached over a
hundred kgs and so they said that’s the
only fix for you
she came to me within three months her
blood sugar levels had normalized
without insulin today she is without any
medicine
she became 30 kgs lighter in six months
she became energetic and while she had a
whole list of other complaints she is
today a confident woman traveling with
full of energy without medicines across
the world what did I do
I just eliminated inflammatory grains
and added some things which we actually
components of food which we have
forgotten to eat our vegetables and
fruits that’s all I did it surprises her
doctors they are in disbelief and they
are sending patients to her to guide
them and trust me all of us can do that
but we have to tune in we have to listen
to the body signals we have to
understand our body a little better so
what are these inflammatory grains one
of them we find is wheat
there are many of them why have the food
that our ancestors told us were building
blocks of our life and health whether it
is milk or whether it’s me wheat or even
sugar for that matter they are so
integral to our diets to traditional
diets so what went wrong where these
foods are now seemingly villains in our
lives so it is a new message it’s a new
thinking it’s a paradigm shift but it’s
time to restart thinking that what we
eat is perhaps changed what our
ancestors ate has changed it’s not only
wheat wheat was very different many many
years thousands of years ago it had only
14 chromosomes today the wheat that we
eat has 42 chromosomes it is well known
that this wheat is immuno genic it
irritates your immune system
but it’s too late way back in the 1960s
and 70s we had the Green Revolution and
we made high yielding varieties to feed
many many mouths
no safety studies were done on the
long-term effects of these varied
variants of wheat wheat earlier was a
tall grass today it’s a very short plant
very short grass
physically may look to same nutrients
may be the same some of them have been
bred to be high gluten
they are we decide resistant there
herbicide-resistant and what does that
mean it means that this is a new plant
perhaps foreign for our bodies
when it’s we decide resistant the
farmers thought it was a good idea to
spray indiscriminate amounts of we
decides
toxicity’s in the grain continue to
increase glyphosate is one of the key
culprits
which has been used extensively not only
in wheat but in corn and many other
grains
because when the crop withstands the the
we decide the toxic chemical it is it’s
okay you keep spraying otherwise
anything which is going to kill the weed
will kill the plant but this plant was
not dying what this has that resulted in
perhaps is a change in the way it
behaves in the immune system mediated by
what we call the gut microbiome the gut
flora the good and the bad bacteria they
are in the gut and that is how they
control our immunity so these little
little tiny bugs so these foods are
certainly not what your parents or
grandparents ate so what’s our take-home
message it’s nice to know but I’m going
to make it very very brief packaged it
in what we call the four G’s gut tune in
it’s a gut feeling and literally it’s a
gut feeling so if you’re you are
suffering from any symptoms which are
chronic like maybe constipation IBS lose
motions paid whatever if you have
persistent symptoms look at it as a
crisis in Oh respect what you eat and
ensure you digest what you eat and if it
is causing anything like bloating or
whatever there is need to investigate
further
keep your gut happy and keep your gut
flora happy keep the good and the bad
bacteria in balance and we can insult a
bad bacteria simply by a single course
of medicines on an antibiotic course so
please be cognizant about what you eat
and there are many many ways in which
our gut gets affected simple things like
stress can also affect your gut flora
and cause disease and through the immune
system
girth gut is literally your
circumference the belly fat please there
are cardiologists who’ve written books
on this and one is titled the Wheat
Belly having not only the ideal weight
but the rise waist the right girth it’s
extremely important because excess fat
on the abdominal and rida spose you to
obesity so please trim your bodies and
make sure you don’t carry excess fat
around the girth what you can do for
this is a very simple take-home message
which actually is routed even in our
chakras Amitha and I will Vedic messages
your grains your cereal that you eat the
carbohydrates they are the reason why we
have a larger girth cut back on these
carbohydrates
have them know you know in no more than
two meals in a day and preferably by
seven o’clock by sunset and this is
actually recorded in the chocolate
samatha in a way that it says the man
who wants to live a long life must not
eat grain the force after sunset not
more than twice a day and the man who
has digestive problems must not repeat
the grain the second time very simple
message and very very meaningful
glutton
at stock spoken about wheat but what is
a pro what is a problem with meat it’s a
protein called gluten which sits in
wheat and barley and this perhaps is the
most inflammatory protein causing the
leaky gut and the symptoms which which
can go with it
it’s not only gluten it’s many more
grains and gluten sensitivity has
increased
jinsol since the last 50 years fourfold
and it’s very overwhelming even for me
as a practitioner to treat people with
long-standing migraines with Parkinson
like symptoms with hair fall with acne
by removal of this protein and I see it
all the time
glucose simpler form of sugar the
precursor of sugar is glucose basically
cut back on sugars again a carbohydrate
a simple carbohydrate and think in the
indian communities in the indian
population we have may be eating we are
having much much more than we really
need
please cut back on added sugars in
drinks cut back on sweets and choose
healthier versions of sugars
maybe gluco a baby good jaggery honey
dry fruits and fresh fruits to pamper
your sweet tooth
having said that I would like to end by
saying we all love our food and like
Lord Bernhard Shaw very aptly said there
is no love sincere er than the love of
food
so let’s ensure that this love fosters
us nurtures us and does not destroy us
thank you
[Applause]
