in the early 1970s
there was an experiment held where
participants were given something that
appeared just like a normal plate of
meat and fries
the room however was installed with
special lighting which altered the way
the color of the food looked so under
this lighting effect the participants
felt that the food tasted just fine
however when the lighting returned to
normal it was revealed that the meat was
actually colored blue and the fries was
green most of the subjects on seeing
this lost the appetite and some actually
felt sick this experiment goes to prove
that we and our acceptance of food is
not just affected by the ingredients
that go into today the dish in fact our
entire relationship with food gets sweet
by the way we feel about the dish when
we taste it the way we look at it the
way we perceive it good morning I’m an
actor turned chef and for good reason
you see when I was prancing about
playing a real mom to all those cute
little kids in all those mommy ads that
I had acted in I didn’t quite realize
the challenges that I might face on
becoming a real mom when I actually
faced motherhood and when it came to
feeding my son trust me I have to
confess I was stumped you see we used to
have mini Wars at home because I would
just not give up till my child had
finished the entire plate of nutritious
food that I had made with so much love
for him this led to a series of
breakdowns and then I realized this
possibly can’t go on so after a lot of
researching lot of talking to experts in
this field I finally started
experimenting at home now my son Agastya
dislikes oats and we all know how he’ll
do to our right great source of vitamin
minerals fiber energy my son a gazelle
loves pancakes however so one day I
decided to make his favorite pancakes
with oats I throw in some chopped
bananas I added some milk and I served
it with his favorite chocolate spread
hawala I had a winner my son
gobbled them all up and that’s when my
Eureka moment happened that’s when I
realized that it’s not what we cook for
our kids that they don’t like
it’s the way we presented to them which
is a problem and you know quite honestly
we are the ones who are responsible for
conditioning our children into believing
that healthy is boring and healthy is
tasteless we are the ones who sell the
food to them in a wrong way I mean we’ll
say eat these walnuts see they look like
brains so they will help in your brain
development and what will it do it will
help you study better oh come on which
eye gets excited about studying better
well mine doesn’t I’ll give you another
example what if you went to a restaurant
and the waiter came up to you and said
ma’am or sir you should order this salad
you see this has Tomatoes
a lot of vitamin C great for your sin
and those are the wrinkles they won’t
happen almonds
excellent for your eye side and look at
the greens my god great create roughage
no problem in the morning yeah you’re
gonna get up go to the other restaurant
and ask for food that appeals to you
without reminding you of your bowel
problems that brings me to the problem
of this whole approach that we have a
children not only is our approach wrong
but her thinking is wrong our very
fundamentals of the child food equation
is wrong we use the extreme approach
either we indulge our children by giving
them lots of junk or we force them to
eat what we want them to eat in a way we
like to eat them anyway enough about the
problem enough of the badgering now
let’s come to the solution how do we
change this approach let me introduce
you to a concept for nudging and I don’t
mean this by
that matching is a concept in behavioral
sciences that tries to get non force
compliance basically it makes someone do
something that you want through indirect
methods confused
don’t be it is it is a very very easy
way of making someone do what you really
want to do and I’ll give you an example
to explain this further so there was a
study where a research team tried to
nudge the staff of the Massachusetts
General Hospital what they did was they
highlighted the unhealthy and healthy
food choices with green and red light so
things like pizza
soft drinks burgers were highlighted
under red and salads and vegetables and
agreed and it will be interesting to
note that the same of green items went
up from 41 to 46 percent and that of red
items actually reduced from 24 to 21
percent this goes to show our
conditioning you see we are conditioned
with the traffic signal lights
we believe that red is something that is
prohibited Green is good to go and
that’s what nudging is all about nudging
is about trying to move this
conditioning in a way that works for you
so how do we do it in food in fact
nudging also helps to retain your
freedom of choice and in turn reduces
rebellion and we all know that the
maximum rebellion happens at the dinner
table right correct so how do we go
about food logic presentation
presentation is the key to eating in
fact it matters a lot because it gives
that much-needed nudge to children
towards healthy food without taking away
their freedom of food choices and we
look at the social media it is
absolutely limb bastard with all those
gorgeous looking pictures of food which
just goes to show that if you like
what you see you would want to try it
right I mean the word the hashtag
foodborne was not created without good
reason so it just goes to show how we
have embraced the concept of good
presentation so why deny children this
special and why in fact stick to nudging
only in the home environment why are
restaurants not waking up to this I mean
they have all the fancy chefs working
for them who can actually create
beautiful healthy eating environment for
children even in restaurants I mean I
did it you see when I came back from
Singapore after an advanced culinary
cause I decided to work in a five-star
hotel because I just wanted to
understand what goes on behind the
commercial kitchen counter as a butter
they wanted me to curate a special
children’s menu for them it was like I
was let out of a leash I was like oh my
god I get to give choices to children
beyond the pastas pizzas and burgers and
hold on before you think I’m a monster
who took away all the exciting dishes of
children let me enlighten you I still
had the pizzas I still had the burgers
except my pizza was angry shaped and it
had nasty flaw finger millet flour in it
my pasta was tri-colored with the Y
Briand colors being provided by carrot
beetroot and spinach Puri
I had burgers as well they were shaped
like cute dogs and the burger buns were
made of whole wheat the patties whoa
absolutely filled with lots of healthy
vegetables and those fluffy unhealthy
pancakes it was a real sellout and they
were exactly that same old ones that I
had made for my child at home
[Applause]
yes I believe in thinking out of the box
and that’s what led me to junk and
jewels method what does that mean take
the jewels of nutrition and make them
look like junk
in other words feed all the right stuff
to the children in absolutely a way that
looks exactly like the wrong stuff trust
me it works I’ll give you some examples
children like fries give them sweet
potato fries at home but make them just
as crunchy just as yummy just as cute
and present them in those cute paper
boxes that they get served in outside if
they like popcorn makes some nice robust
paneer or chicken popcorn make nice cute
bones out of colorful papers at home and
serve it in that if they don’t like nuts
crush them to a powder bind them with
dates and coat them with good quality
dark chocolates put some sticks in it
and voila you will have chocolate
lollipops which they will not refuse
trust me
this and many more such techniques can
actually lead you to a lot of joy in the
kitchen and another thing that will
cause a lot of joy but a maybe a
messiness as well is actually involving
your child in the kitchen do all this
that you’re doing but get your child to
cook with you that is another great form
of nudging because it it gives the child
the sense of ownership and B a sense of
responsibility towards that dish they
want to actually try those dishes and
eat them because hey they created them
right so this is again a great form in
fact cooking is something I think all of
you should learn how to do because it’s
a great skill it gives you great sense
of Independence no matter how busy or
not busy you are how rich or poor you
are you must know how to cook listen if
you can feed yourself you will survive
all right so finally all these
techniques all these all these solutions
all these methods that I have told you
will there work I believe they will
because because they just have to you
have created it with all your desires in
fact they will go on to revolutionize
the way we think about children food
equation and immense the noise of fast
food may actually give you a way to
solve this amicably trust me you can do
this within the realms of your own clean
kitchen but simple local TC easy
ingredients which with a little bit of
tweaking and a little bit of Mamiko
magic will give you a great wholesome
healthy environment of food not only at
home but in your children’s gut as well
do you think it’s a tall order for
creating a healthier future generation
well I don’t think so
thank you
