8:47 ad somewhere along the northern
seas for days we have lived winter
wandered in the dark but I’m not the one
to back out of a challenge ahead only
Gracie’s melting into gray skies no
familiar sight no sound but the howling
wind even the moon has deserted us only
the heart beating in my chest stops me
from becoming as frozen as the air
around us the forefathers warned not to
embark on this journey I am afraid that
if we do not find land soon we will
surely perish a rocky coastline with
mountains of pure and brilliant white
emerge from the darkness breathtaking
and horrifying in all its splendor I
took the first step in the black sand
knowing there a soil below and Sun above
is like a remedy to me I have felt the
earth and touched the crystal ground
nowhere have I known the miracle of life
like in this white land there is no
[Music]
we landed in Iceland here it is negative
one yeah
what I love right here man by the way yo
I’ve never driven in the snow before I
[Music]
I make beer and spirits and obviously to
check the scenery out but I couldn’t
pass up an opportunity to go
snowmobiling believe it or not this is
my first time doing it I’m super excited
I cannot wait I mean look at this more
just view snowmobiling
[Music]
one of the reasons one of the many
reasons why I’m on this journey is
because you know we’re here in Iceland I
would get served something like this
grenadine what is grenadine those would
be the initial questions you know and
then the second thing is okay what
distiller is making an Emmerich you know
and I would look at this bottle and I
always think what you know who makes
this what is this all about and that’s
what I’m here to do and that’s what I’m
here to tell the story
[Music]
I mean it it all started with a glass of
whiskey and distillery is a family-run
company we have to his family funded
yeah Emily found it yeah and me my
father and brother we simply put just
had an idea
like many crazy ideas everybody has the
idea of making a whiskey distillery but
maybe not everybody does it it’s crazy
enough and tenacious enough to actually
make it make it a reality because I’ll
tell you it wasn’t easy so in 2011 we
have our first experiments run we do a
semi conscious choice or starting with
like not knowing the first thing about
making whiskey our aim for that was
maybe a thinking that we wouldn’t be
corrupted by some standard practices
that are legacy issues for what and the
whiskey industry for accepted so we
wanted to make great Icelandic whiskey
that I’m just making average Scots
unless the easier route would have been
calling a Scottish accent the first
thing you would say is you can’t use the
Icelandic barley it has way too little
sugar and you have to import this
quality value that we do not do the
exact same way and get the exact same
product that for us we were seeking to
do that so we took the long road an
experiment because making whiskey is a
very complex process it sounds easy know
that the general tax can be outlined in
a few minutes but maybe great whiskey
and a great product it’s a La Jolla
company need the money
what helped us most grow as distillers
and what’s actually doing the distilling
yeah and doing distilling again and
again again and doing the whole process
not just part of the process just from
great to class that produce closer to
degree is close to the process and and
what we like about it and throughout
this we we learnt the most I would say
the distilling act and brewing act this
is sort of a mix between science and a
crime so you have have to have actually
the both parts which you can just have
the academia that you have to have the F
with Eve starts in the ground as Farley
for other types of grain we as family
I own a farm yeah where Marley’s go
typical
would be used as happy one day we
thought to ourselves that we should
maybe find an alternative way of
utilizing this party and we just said
hey let’s make whiskey yeah awesome
the isotonic barley is sort of a hearty
strengths selected and cultivated here
in Iceland as a strain to just survive
the actual summer weekend it’s really
Wow which says not that warm and not
that long green – we’re actually just
reaching that the zone where we can’t
grow barley the whiskey making is all
about getting the flavor of the raw
ingredients through into a finished
distilled product and then refining it
by maturing it on a cast talk to me
about smoking the barley with sheep dung
and obviously this is not some deer
marketing tool that you guys came up
with so I mean this is actually
Icelandic tradition correct it’s
tradition Iceland actually I’ve been
used in many parts of the world it’s
better than it actually sounds because
we have to keep the sheep in farm horses
during the winter they get fat there on
the floor and live there their whole
winter and afternoon into this like a
thick layer of compact ours which is a
mixture of hay grass shipped on flight
of urine they might mock that out try it
out during the summer months and we’d
use that as a fuel for so use the heat
houses cook with and smoke with but
nowadays we have like less smelly ways
of heating your house yeah so we only is
it to smoke with we’re actually inflamed
somewhere between Scottish Irish and I’m
really enough perfect and it makes sense
figures we’re an island in the middle of
the Atlantic Ocean between all this
great whiskey whiskey make nation yeah
we
put it into our milk yep Malita we then
transfer into a mash tank this mash tank
is a quick processing stack we do it
okay where we do at geothermally heated
water so we start with just fresh lean
iced on the cold water which we heat up
using a heat transfer from geothermal
heat the hot water and the mashing
process is a little bit reversed for us
because we don’t stop the cold water and
heat it up we start with hot water and
then we simply let it drop in
temperature until we’ve mashed and
activated all the starches cool it down
and then transfer to a permutation thing
we’re doing this a little bit back to
basic and looking at which the water
started yes so we do a green in
fermentation we firm it with the barley
in it you know to see it a little bit
and clearly here that it’s layered the
liquid is quite warm because of the
activity of the fermentation if you look
back you have seventeen hundred’s yes
this is the way that we do it they
wouldn’t have any equipment available
for them to separate the bargain and as
we keep the barley and we get even more
extraction of the flavor the more spices
more coils four days of cast words
Captain Yoos so after that we transfer
it to our strip stills which is called
the Mario and Yanni yes they handle the
process of stripping all the alcohol
from this beer we start distilling it
and constantly agitated with our
agitator after that we start getting
about 45% off and we run it all the way
down to 1% of po and we’re just getting
all the off quorum so from 900 liters up
to this interfere we get about 260
litres to 80 litres of
it’s called Aloha way we have a very raw
long way with a lot of oils a lot of
character
yeah a lot of essence in it what’s that
white gold this is oil conversations’
it’s just basically oil that comes from
the body and what whiskey is actually
just alcohol they are combined with
various fat molecules yeah which is the
flavor the next step you have to
Elizabeth our spirit stuffs named after
my grandmother I’m not sure she’s happy
about that start heating it with an
interact heat source then the display
starts coming up well we start with
getting from the condensing column is
about 75 78 percent off four and this is
then when we cracked it down to three
distinct part which is the hats the
hearts and the tails the hats is the
vital component which we start with and
then we start running with the hearts
which is the best distinct flavor of the
whiskey after we pack from the heart we
start collecting the tails and distill
all the alcohol from the pot all the way
down to 1% and then as I said we use the
heads and tails combined with the lower
in the next run of the spirit transfer
it who oak casks then we just wait wait
and
it takes 12 years two minutes on this
was I owe my family I was matured great
he wasn’t it yeah took that brunt of the
barrel and a lot of the young ones
seeped into the barrel with oddly over
we shift this to a brick and reduce yeah
where they use it to mature their stones
yes and make a barrel aged out yeah so
the stout gets a lot of the
characteristics foggy because a lot of
that and the boot is permeated by
Claudia Martin it and they mature their
stop there for two or three months and
shipped the barrel boxes and now the
barrel is permeated by their stout yeah
and then really fill it with Yamaha Wow
Wow
yeah it’s a sweet fruitiness there’s a
and then you say this is 61% and there’s
this is that know about the mush yeah in
undertone yeah comes through so strong
and it works with the cactus that we
have from you and this is gonna be a
phenomenal cash bonuses right
this is what Iceland’s about you know
but this is just one as we were driving
before you saw all the other different
waterfalls I mean so this is just one of
many I mean everywhere you turn around
Iceland or something something different
that yet tomorrow storm this is the not
to walk up Wow
yeah how long are you supposed to just
just a couple hours until I stink
Saturday morning [Music]
