Jamie Oliver on using herbs

herbs are absolutely at the cornerstone
of all genius cooking they’re absolutely
the cornerstone of all historic medicine
if you have herbs in your cooking you
have more flavors and sensations and
dynamism in your cooking it doesn’t
matter if you live on the 40th floor of
a block of flats it doesn’t matter if
you’ve got no garden at all you’ve got a
veranda maybe you haven’t even got up
around and maybe just got a windowsill
fresh herbs at the very least down the
market are the minimum so in this part
of Europe with soft herbs basil tarragon
chervil coriander parsley all of these
little soft herbs are quite fragile so
you kind of have to restart them every
year but woody herbs times oregano bay
leaves sage rosemary these are Hardy
they’ll grow pretty much all year round
they’ll die back a little bit in the
winter you buy a pot for one pound fifty
two pound three pound depending on the
size and you’ve pretty much got it for
life because you can take cuttings and
replant it so what I’m saying to you is
go buy some herbs especially the woody
ones which a great value well behaved
they kind of do what they got to do but
if you can get me in a bigger pot or at
least change the soil regularly they’re
gonna do well these herbs can really
rock rock your cookin go for it get into
it and and again just because I’m
sitting in a bunch of herbs and flowers
does not mean I’ve gone mad this is
serious this is what cooking is all
about make it easy for yourself
