backgrounds been that bad but saying
that there’s a lot of people Michaels
their backgrounds have been at work and
like these are like not their life
sciences but it’s one it’s of good times
and it’s probably a better chance than
most things that they could do
I didn t think about my future all I was
thinking about those white dudes become
intoxicated that day I was in education
but that was like I was hanging in there
by the skin of my teeth so I won’t do
nothing my father started to depress me
that I knew that I was going to be if I
didn’t do anything to my benefits and
risks in my life not doing nothing ian
has a real cool because we’re a great
restaurant we’ve got lovely food amazing
projects and resource really carefully
great wireless everything that you look
for in a recipe we’ve just got this
added buzz witches are not charity in
our purpose 15 takes 18 young people for
a year-long program they all have a
range of different backgrounds they come
to us and with a new page a clean slate
and the opportunity that we provide them
with is to become professional chefs at
the end of the year to come from nothing
to get upset o’clock in the morning this
is going to college four days in two
days a week coming to work from eight to
eleven at night for me that’s a big
achievement

up there do we go to college do two days
a week at college and then with one day
a week we do something
trips or activities
free days a week at the restaurant
working in the restaurant as we would in
the industry
and one of the key parts the program
with the sourcing trips they’re
fantastic because that’s the way they
understand the produce they’re going to
use in the kitchen but it’s much more
than that for some of the young people
is the first time they’re outside their
postcode

before I was just working part-time in a
bowling alley even come in our store
that’s it mini my goal at the time and
miles of the goodness to finish the
course and completing all without that
dropping out or anything higher and then
I think towards you get when you get to
the end he then can see the future you
can see actually this is a career path
for me this is something I’ve been doing
this my life
we give it a lot more support here
everyone’s got their own stories so is
their understanding if you’ve got
troubles going on a home they’ll help
you try and sort them out as best as
they can it won’t send our kuna written
comm I can’t get a job I can’t go and
college I can’t do this I’ve been prison
I can’t Virgil I can’t do this but
really that’s not soon you can we still
can go places to do things and there’s
people that won’t help is that don’t let
them help you most people these days
don’t let people help if you’ve got
problems at home or anything cuz they
make you feel better about them so you
can concentrate on the force

my sister goes to college now in their
lap right about a role model to rats

people like the way you look at me as
all like I mean I get bored easily if I
don’t enjoy something after all that
there’s no point to be doing it since
I’m going to do something every day of
my life oh no no that I’m enjoying it
