How to sharpen knives – Jamie Oliver’s Home Cooking Skills


if you’ve got yourself a nice chopping
knife it’s a good idea to know how to
keep it sharp now there are all kinds of
gimmicks and gadgets on the market to
sharpen your knives but the best all is
a steel is the original best idea really
all it is is a piece of metal with
ridges along it like that and when you
run a knife along it it sharpens a blade
okay now it’s chopping your knife it’s
not it’s not terribly difficult all you
need to do is place the knife against it
sort of perpendicular to a knife you see
like that and then angry a knife
slightly at the minute it’s flat on the
blade now you don’t want it a 90 degrees
you don’t at 45 degrees you want it
maybe about 10 degrees really shallow
angle and then move your knife down like
that so from the base of the knife
against the base of the steel you move
the knife down till it’s tip against the
tip you see another way to look at it is
as if this is a stick and you try to
carve it to a very fine point okay move
your knife down but a little bit
pressure on it so you can feel it
sticking against the steel and that’s
when you know that steel shopping it now
obviously this is only one side of the
knife you’re doing here to do the other
side with the knife underneath and angle
it the other way this time
so you’re slicing against the bottom of
the steel okay
heel to heel tip to tip and then once
you get comfortable with it you can do
one slice on the top one slice on the
bottom thighs on the top slice on the
bottom always make sure the knife is
facing away from you
not like this because that way you might
cut yourself make sure the blades
pointing away and that’s it you don’t
need to spend hours doing this if every
time when you finish using a knife you
just give it a quick tarpon
that’s all it takes to keep your knife
in tip-top condition if you don’t do
that and you leave it in the drawer and
you leave it kicking around the blade
will blunt to the point where and
actually you still won’t be able to
sharpen it all it takes is a little shot
and like that every time before or after
you finish using it it will keep your
knife in tip-top condition
