hi I’m Georgie from Jamie’s food team
and I’m going to show you how to prepare
Swedish style fish cakes first you want
to get two slices of quite stale bread
even speak white styles they combined
everything together and talked the
moisture you put them in your food
processor and blitz them they’re quite
fine
perfect grab yourself some tinfoil
put it in your work surface and to Pat
your breadcrumbs leaving it to one side
why should we make your fish cakes just
evenly pour the nuts and now we’re going
to make the fish cake filling so here
I’ve got some tuna salmon and had it
always put them in the food processor
and blitz them up this you want to
season them well so good pinch of salt
pepper I’ve got some parsley leaves here
as well which Philip it in and then
grate in the zest of an unwashed lemon
make sure your lemons are aren’t waxed
you don’t want to get that in your feed
also don’t grate the lemons too much so
you just start seeing the white pit stop
there because that’s what makes your
food go bit better it’s not super
you don’t want to travel too fine and
tip your fish mixture back onto your
plate or platter so you play that first
be really careful you want to cut
yourself and then just tip it out that’s
there’s any fish left one I just really
carefully scrape it off and then using a
tablespoon a couple of tablespoons of
your breadcrumbs big heaped tablespoons
and put a little bit extra and scrunch
it all together we’re going to make four
fish cakes here and you could use a
pastry cutter sort of give you a guide
around ten centimeters like this one
here or you can just divide it whatever
is easiest so I’m gonna half mixture and
then half again and I’m gonna roll the
fish in the breadcrumbs to make sure
your mixtures all well mixed your
breadcrumbs are evenly sponge through
the fish and then these is where I find
it’s just half the mixture and then half
again so you get four even portions and
then what you want to do it’s just roll
the fish as if you’re making a burger
basically and also make sure that the
it’s all even thickness all the way
around if you’ve got an uneven fish cake
or burger it’s going to cook differently
on different sides so you’ll have sort
of a warm middle and all the outside to
be overcooked so make sure they’re
pretty as even as you can like that use
it of your hand
flatten it and pop it almost and then
put it in the boat come and spread them
out
and give them a good coating just pop
them to one side and do the same again
for your other do you can use different
fish we’ve given you a sort of ratio but
if you don’t like salmon or you really
like you know how to core tuna you can
up the amounts and change them to
whatever you’ve got or whatever your
preference is there’s another one
and also your push for time make them
pop them in your freezer just make sure
you defrost them and then having another
time if you haven’t got massive time
during the week and you want to make a
quick supper there kind of when you do
fry them put them in a pan little bit of
oil medium heat and they need about
depending on how thick you’ve made them
between 7-8 minutes on each side
may have it how to fast Swedish style
fish cakes
