Grilled Lamb Kebabs – Jamie at Home


so much time in my world so what I’ve
got here is a shoulder of lamb just cut
it up into inch dice like that so first
of all get your lamb then let’s talk
about spicing it to a nice little small
handful of pick thyme leaves over here
we’ve got the chili I’m going to use
about a teaspoon of flat teaspoon and
then we’ve got cumin here as well which
has been ground so what about a good
pinch of this and then this is a really
interesting one this is called sumac
it’s almost like a kind of dried
cranberry flavor to it
so a nice good two pinches of sumac in
there and then seasoning a good pinch of
sea salt and pepper here a nice handful
of pistachio nuts they’re already peeled
straight in there I’m gonna put the lid
on and you can’t just turn it on you got
a pulse it so look we’ve got the lovely
coarse mint to me they’re just squeezed
a handful of that wonderful meat in and
around that skewer so we’re gonna get
these beautiful cobalt look at those and
I’m gonna place that straight on there a
big handful of picked parsley and then
what I want to do is get my mandolin
cutter just finely grate a load of onion
you want a nice pinch of salt with the
onions and then the juice of half a
lemon and I want you to pinch these
together with your hands to really
massage that salt and lemon juice in
let’s turn this over and then salad
lovely crunchy cars remain I’ve got
rocket here neat a little bit of olive
oil
just a tiny bit bit of lemon juice toss
that okay right let’s play these little
babies up I’m gonna get our nice flat
breads and then I’ve got my lovely salad
leaves and then we get a lovely hot
kebabs what we do now is we have a
little bit of chili and we just put that
over the top a little sprinkle of extra
cumin as well a little sprinkle that
sumac which has got such a fantastic
sour flavor an extra bit of salt on
there and then time
a little bit of extra olive oil I just
break it up your fingers all right now
I almost dress it in and on this little
bread nice little spoon of yogurt and
then fold this little murmur up pack it
together really squeeze it nice and
tight and you’ve got something you can
put in a bit of paper that’s just yours
no one else is just mine thanks very
much
oh my go I’m telling you you got to
shine
