Chopping a bunch of fresh herbs – Jamie Oliver’s Home Cooking Skills


next thing I’m going to show you is how
to chop something like a herb nice and
finely so parsley for example I’ll
gather together oh that in a little pile
take my chopping knife roll chop it
keeping your fingers tightly up in a
bunch tightly out of the way
okay now this Parsley’s chopped but what
do you do if you want it finer or the
answer is that you cross chop it now
what you do here is place the tip of the
knife on the board just put it
horizontally in front of you your
fingers on the tip of the knife to keep
it where it is and then chop up and down
like that just a simple up and down like
a guillotine and if you just chop it all
with a surface here chop it over the
parsley you might need to scoop it back
into a pile 9 again you just keep going
like that and the longer you go the
finer your parsley gets and you stop
when it’s as fine as you want it to be
okay
now this isn’t only just for homes you
can cut anything fine about this you can
cut meat or fish or onion or carrot or
celery or anything you like
if you chopped it and you’re not happy
with how how fine it is you think you
might want to chop it finer this is the
answer just make sure to keep your
fingers out the way the blade what you
don’t do is curl them around like that
keep them up out of the way because you
don’t want them getting caught between
the blade and the board and then you
have finely chopped passing
