hi my name is nick robinson i’m here
with watchmojo.com and we’re showing you
some healthy recipes you can find some
more recipe ideas on my own website and
in carts calm so i’m here with aaron
fraser and we’re going to be baking
basically Brussels sprout leaves with
bacon which sounds incredible because
you put bacon on anything it’s going to
be delicious and this is of course
organic bacon yes is in fact everything
is organic isn’t it it is you’re going
to notice that even though it sounds
like a really fancy recipe there’s
really very few ingredients so tell me
what goes into this recipe we start by
taking the leaves off of the pods here
of the hustle sprouts the second step
would be rendering the bacon to get a
lot of the fat out and then we assemble
with the stone ground mustard and the
organic ginger and a touch of maple sir
so we’re gonna blanch the Brussels
sprouts we have to cut this stem off
enough that you take so to make a
cross-section of these parts here and
cut them off yeah what you want to do
and after that is to pull the leaves off
if you find the ones that go around the
outside get pulled over you come up much
quicker you prepare these basically how
you would prepare your your lettuce yes
except we’re just taking a hella long
and it’s much much smaller you so now
we’re going to blanch the Brussels
sprout leaves but why do we have a
bullet ice water just to cool them down
after we cook them they’re going to go
in such hot water and they’re cooked we
heat it up again later that we don’t
want em to will too much so it’ll be
cooked a look right green and we want to
cool them off really quick okay let’s go
do that
so I noticed you put the leaves on a
piece of paper yes let’s try to get some
of the water out of them I shall provide
a piece on top so now step two rendering
the bacon just all right let’s do space
it out how hot does the pan need to be
when we put the bacon in hot enough that
you hear the meat sizzling when you put
it in should have that almost like we do
bacon it I’d say but I’m not medium not
high but in between and how much time is
it going to take us until the bacon is
completely rendered I just want to let
it sit like bacon you want that fat to
render out and leave you with that nice
chewy tender meat inside so i would say
about 18 minutes so Aaron I know
everyone’s wondering how come I’ve let
someone put bacon in one of my healthy
recipes so tell me a little bit about
why this bacon in particular is healthy
bacon well it is an organic animal that
we’re dealing with so it doesn’t have
any antibiotics or hormones or and it’s
also not fed any animal derivatives or
animal by-products and we are rendering
most the fat out so we’re dealing with
just mostly the meet at the end and fats
are good for you in small amounts so
this is gettin this is not bad at all
so it’s a simple recipe but if I want to
make it during the holidays and cut down
on prep time what can I do essentially
you’ve done it what we’ve done so far is
everything is ready we just throw it in
all together now so I could prep
everything in advance and then just
throw it in the absolutely I start with
the ginger just to soften about
actually we forgot to put the maple
syrup in so if you want to just do a
little drizzle round in a circle all
right tell me what’s good and it’s done
so Aaron any last tips before we start
making these on our own shirt I do
everything at the last minute it doesn’t
take long to put together it’s literally
30 seconds to a minute to assemble so
yeah just wait till you’re ready to
serve it and go for it done to make sure
it’s not over cut that’s right well
thank you so much and thank you for
