beer is becoming an art form again what
you see happening right now in beer is
not a trend and it’s not a fad it’s a
return to normality that’s an important
thing for people to remember we’re only
part of the way back to the diversity
that we once had and so this really is a
revolution people are really interested
now in flavor and they’re less
interested in conformity and I think
that you know of their era many of those
companies that make these industrial
beers their beers really were the best
in many ways they lasted longer they had
better technology they would give you
greater consistency than all the little
breweries around them and there was a
reason why they all competed everybody
else but now that we have that
technology available to everybody that
advantage is now gone and the advantage
of the craft brewer is creativity the
brewer is no longer just a food
scientist he is now actually a crater
like a chef we would love to put
nutritional information on our beer if
you take a beer like our local one
pretty strong and the yeast and
everything else are going to give you
loads of B vitamins so we haven’t run
the kind of us RDA numbers like you
would on other foods but they’re pretty
high and actually if you go to any
health food store you can buy it says
brewers yeast you can buy it in little
expensive nasty tablets or you could
have some Brooklyn local one and get all
the same vitamins in a glass and smile
and now the brewer becomes basically a
chef of beer and that’s the way it was
really always supposed to be the thing
that’s really changed is that the big
Brewers are starting to now emulate the
small Brewers so you do have a lot of
them making beers that are a whole
flavored and often they put them out
there on the market you know to look
like they came from a little brewery but
in a way and people get very angry but
if you look at it well these are big old
grand companies of American industry
what are they supposed to do you know
that’s a natural thing if people are
saying they want craft beer
well these guys are going to try to make
it and you know eventually they’ll get
pretty good at it
