Jamie Oliver’s Crunchy Green Pork Balls

welcome back to another edition of weird
and wonderful by Jamie Oliver we run our
budgets okay so today is about a
wonderful and weird ingredient this is
ladies and gentlemen green rice check
this stuff out this is rice e nectar
I’ve never ever seen this before in my
life really unusual
now green rice is from Vietnam there’s
the fresh green rice which is when the
buds of rice are really green naturally
and really fresh and that’s a real
delicacy and then this one here it’s a
young sticky rice it’s being dried on
the pandan leaves and what happens is
the rice naturally sucked up the
chlorophyll from the leaf and it gets
squashed and flattened enjoyed and this
is what you get now you can get this
green rice from good Asian supermarkets
and you can get it online
the genius of green rice is texture if
you have a look we’ve got some pork
balls here and they’ve been rolled in
the green rice and then they’ve been
deep-fried and look look at the texture
it’s absolutely puffy and crunchy
whatever you put it around you could do
it the fish I’m sure prawns chicken this
happens to be pork but you get that
lovely soft fragrant inside and then you
get the beautiful crunchy outside so let
me just show you here we’ve got some
nice pork belly that’s been minced here
with a little shredded spring onion
garlic chilli coriander we’re gonna put
the green rice here and sort of squeeze
it in and around so just press it into
the rice to be honest just by squeezing
it in see what I’m doing there when
you’re making the actual balls that’s
what you get okay so it’s going to roll
these around
and of course deep-frying not the
healthiest thing in the world but for a
treat
brilliant like little canapes or nibbles
with a beer as you’re warming the night
up Cheers we’ve got some very hot oil
here oil is at 190 degrees we’re gonna
put our pork in you’re going to see some
of the rice go straight to the top of
course being nice and hot it’s gonna
cook super quick okay so these portholes
have had about four minutes you want to
cook through I mean look how gorgeous
they are
they got attitude they’re gnarly you
know that they’re crispy yes it’s a
deep-fried treat we’ve got fragrance
inside there and it looks like literally
like an alien has just landed on this
spoon so I’m gonna put that onto some
kitchen paper or a little detail there
so let’s just serve it up I’ve got a
lovely board we’re gonna take our crazy
little balls and pop them on here really
unusual something different and for me
that’s what weird and wonderful is about
show us give us let me find and give you
some weird and wonderful ingredients and
let’s share it if I was going to finish
it I think it’s nice to finish it with
some coriander some mint and a few
little flecks in and around our little
story here and I think there you’ve got
a really nice clean temporary little
dish and of course what we do is we go
along we grab one of our little balls we
have a little fast
a little dippy dippy woowoo and then it
goes on another voyage to a lovely place
called gob
mmm fast-forward so heavenly really
really good astonishingly good really
exciting definitely worth having a go at
that okay
salad now green rice can basically turn
a really boring salad into something
exciting we take our little badass rice
and we’ve got a new versatile crouton
let’s just have a snow shower of
beautiful crunchy rice and that my
friends will be a really lovely weird
and wonderful salad so there you go guys
