Jamie Oliver talks you through preparing an avocado


okay preparing these little babies
avocados people love them loads of
people buy them and did you know the
biggest and most common reason for a cut
across the palm is avocados so you might
as well know how to do it properly
safely and quickly
so get your avocado right you want to go
straight smack bang in the middle get a
sharp knife carefully and slowly and
smoothly cut through find the stone in
the middle then move out and just rock
it around never applying never ever
applying too much pressure that’s one of
the reasons that if you have a blunt
knife it’s even more dangerous than the
sharp knife because you have to really
really push it and then when it goes off
with the old fingers so we’re just
moving it around like that once you’ve
done that it will just click out like
that and there you go beautiful avocado
if it doesn’t click out that it ain’t
right when you shouldn’t have bought it
in the first place if you’re ever Kardos
not ripe just pop it in a brown paper
bag of a banana
it’ll be good in a day and a half no
worries at all and then a lot of people
kind of get geeky and try and sort of
you know peel the avocado like this
nothing wrong with that you can use like
a little knife to do it or just peel it
off like that as you can see it’s fairly
fiddly you can do it slightly cleaner
using a knife like this but I want to
give you an alternative that I think’s
much easier and less stress and sort of
less bitty so let me just finish this so
you can see what I’ve done so that’s
what we want to achieve a peeled piece
of avocado we’re going to get rid of
your skin and stuff here and then while
we’re talking about it the avocado stone
this is where the cuts happen guys
because people put them in their hand
and if they’re not experienced you know
they see chefs just flick it which is
what I do and then twist it which is
what I do and it comes out right you
shouldn’t do that unless you’re an
advanced cook you put the avocado down
like that you get hands all the way away
from it you just tap it like that then
you twist it out and then at no point
does your hand and the knife get
anywhere near each other but basically
the cuts happen when that happens not
pretty so peeling it nice and quickly
instead of trying to peel it with your
knife or your fingers just get a nice
big spoon like this in here and just rub
it around the perimeter of the skin
about that and you can get the whole lot
out in one by that which is dead easy
look that’s completely clean in there
the other way to do it
now just to prepare another one nice and
quickly knife in find the stone roll it
around find other end twist it
put your stone down tap it twist it out
it comes now another way to do it which
i think is kind of cute
is instead of doing one whole half just
get a teaspoon or this spoon and do
lovely little kind of scoop outs and
that for a salad
looks dead cute you’ve got a nice sort
of wave to it you can see that lovely
wave you get to it which is nice sort of
shapes and again it’s dead quick and you
don’t have to be uptight to do it so
there you go I’m now exactly an avocado
but your minds will do it properly and
safely and also make it look nice if you
want a bit be a bit 1980s that’s one of
my first jobs as a chef you can
basically get that piece of avocado
sliced not quite to the end I never do
this by the way but I can’t stop myself
from doing it and just slice all the way
down like that
and when you’ve done it you go like that
and you have a nice little fan our takes
me back to the 80s rock and roll
