Jalapeño Mac & Cheese with Beer Matching | John Quilter

hey foodtube jonquil tete aka the food
busker I’ve got the most amazing comfort
food treat for you now mac and cheese
but not a regular one because I’m using
four cheeses it’s kind of ly delicious
and we’ve hooked up with there’s a beer
for that these brilliant guys that show
you the right style of beer to go with
your dish so let’s crack on and get that
mac and cheese made right let’s get the
bechamel now bechamel is a basic white
sort made up of fat butter flour and
milk so that’s been cooked through and
now we’re going to do is going to add
our four cheeses in there the first one
we’re going to start with is brie you
want to add equal amounts of cheese in
so it’s about 25 grams of each one take
off the crust don’t worry too much about
getting it all up that’s fine this is a
nice right brie that’s gonna add and
gooey creaminess to it now we need 25
grams of cheddar now I’ve used a nice
little cheddar for this 25 grams of
Emmental now mn tiles brilliant looks
distinct flavor but also when it melts
if it comes really gooey and it’s going
to make this mac and cheese more
indulgent finally 25 grams of Gruyere
get marry what we’re going to do is just
incorporate all of those in this is now
round packed with flavor we’re just
going to season there’s some salty
cheese in here so not too much salt
we’re going to put some pepper in there
now I’m using white pepper you could use
freshly cracked it’s a bit aggressive
right let’s get the macaroni now this is
already being cooked and it’s been
cooled down and then it’s just had a
little bit of oil just a little bit of
olive oil put through it so it doesn’t
stick together I’m going to put that
into our dish the next thing we’re going
to do is it going to take our sauce and
incorporate it in okay now let’s get the
food busker twist for this dish ready so
I’ve got some jalapenos and then some
beautiful fresh parsley these flavors
here are really important to this dish
because they’re going to cut through the
Moorish nosov all that cheese
so once you’ve got the parsley done same
with the jalapenos if you don’t like
jalapenos and you want to put something
else in there maybe some birds and
chilies and you do what you want right
so those two ingredients are going to
bring light refreshment to the Moorish
nests of the cheese in that dish but now
I want to meaty naughtiness to
complement the whole thing I’m going to
fry off some pancetta now it didn’t want
to use pancetta you could use streaky
bacon but make sure you use the rashes
because I want the fat that’s in the
rashes because that’s going to render
out as I cook it and then I’m going to
use the breadcrumbs that I’ve got to
absorb all that just cut through open
that up okay and then let’s drop this
into the pan hot pan dry no oil now if
you’re a veggie you don’t want to use
bacon why don’t you try some glossy
tomatoes or sun-dried tomatoes just kind
of a look you can start saying that the
oil it’s beginning to come out that’s
exactly what we wanted cook it for about
two to three minutes until you get it
beautiful caramelized and crunchy just
like this guy absolutely delicious let’s
get the rest of the ingredients in in
with the jalapenos and then in with the
parsley and you can hear those crackling
and getting to know each other because I
just want to slightly cook them and now
I’m going to add the breadcrumbs in to
soak up all that beautiful fat that’s
been released from the pancetta just
look at it looks absolutely delicious
right let’s get that on the time yes I
don’t want it to penetrate a little bit
not to just be on the surface okay let’s
get it in the oven for about 15 to 20
minutes
right while that’s in the oven let me
talk to you about the beer now the style
that I’ve chosen to compliment the mac
and cheese is Pale Ale now Pale Ale is
made up of bitters golden ales IPAs a
piays it’s quite diverse the reason that
pale ale works so well with this dish is
the fruitiness of it complements the
tankiness of the cheese and then the
bitterness cuts through the cream and
stands up to the jalapeno now guys if
you want to see some amazing beer videos
then subscribe to our awesome sister
channel drinks tube go on run my
brothers and sisters it’s ready I’m
gonna just give it a little bit of salad
I’ve got three fantastic Pale Ales that
will compliment this dish you might want
to go for this guy bitter herbal finish
this one’s got a dark peppery vibe but
I’m gonna go for this diabetes beautiful
sweet tropical vibe that will complement
the dish perfectly just get an explosion
of tropical fruit straight off and then
it’s got that beautiful refreshing
bitterness
immediately get that just dominating
cream powerful cheesy bow and then
you’ve got the contrast of the bacon you
getting the crunch we’re getting that
heat now of the jalapeno coming through
now what you want to do is you want to
mix some of this in with that flavor
immediately refreshes my palate cleans
it calms it down but it also kind like
all those flavors are having a party in
the gob absolutely delicious and then it
just what it does is is it invites you
to take your neck port for to mate7 a
chat ah so good you’ve got to try this
dish when you’ve got to try this beer
that we suggested goes with it but
listen it’s a suggestion there’s no firm
rules you get to do what you like so

dish with or what are your favorite
