How To – prepare skate wings

hi I’m Pete from Jamie’s food team and
I’m going to show you how to trim a
skate this is your skate it’s got a bony
bit at the top here you can see what
you’re going to trim off and a little
fringe around the bottom which is just
going to tidy up so we end up with a
neat almost semicircular piece of fish
now the easiest way to take this bit of
bone off used to use a heavy chopping
knife but instead of hacking it like
that and I put the knife in position
I’ll take a rolling pin but you can use
a piece of wood or anything that’s heavy
and wooden you may not want to use your
rolling pin because we’re going to hit
the knife like that and you might end up
marking it if you don’t mind or it’s an
old rolling pin that’s fine but you
might prefer to use just a plain piece
of wood the nice thing about this is
that when you hit the knife with a pin
it’ll go straight through the bone and
make the cut in exactly the right place
there we go the cuts perfect in the
right place
listen go in the bin and here’s your
skate wing we’ve got a slightly raggedy
edge to the bottom and we’re going to
take a pair of scissors and just trim
that up make it look a little nicer
little more or hemispheric kitchen
scissors a good nice heavy-duty kitchen
scissors and you just trim around the
edge
no trick to this it really is as simple
as it looks you’ll know if you’re
cutting too far up into the fish because
it’ll get hard to do this should really
be no more than cutting cardboard no
more effort than that required there we
go so you have a skate wing nicely
trimmed no bone at the back and no wispy
frilly bits around here nice smooth edge
and this is ready to be cooked either in
a hot frying pan or in a hot oven or
maybe in a pot with some white wine ever
