How To – prepare an octopus, from ‘Jamie Does…’

I’m going to show you how to prepare an
octopus here is learn on a chopping
board put all its tentacles this way and
you’ve got three parts the head which is
this bit you’ve got the tentacles which
is this bit and a bit in the middle and
the bit in the middle is got eyes and
beak
and stuff like that in it nests of it
you want to get rid of so all I’m going
to do is cut here just below the eye see
the eyes just at the bottom of the head
okay that’s the bit you get rid off now
in the middle is its little beak if you
want to get rid of too
it’s hard to spit like shell so this is
what we have and you see through there
now inside their head there’s all sorts
of other gunk which you need to get rid
of so all you do you can turn the head
inside out and call this out it’s quite
tough it’s not for the squeamish let me
go
there are still some bits and pieces in
there but I’m going to give everything a
wash now just to see where we are so
I’ve got do this in the sink under
running water
I’ve just got a big bowl called walk
like you turn the head inside out
clearly this stuff off you don’t want
basically what you want to see a nice
white clean head wash as much as you can
of the ink off there we go
once you hold it peels off quite easily
and there we go
where’s the head
now the tentacles they just need a good
wash basically all these Sakura bits
here sometimes they put there and them
so you just need to wash the night once
I got the worst day off I’ll change the
water just give it another another rinse
again so that so loving someone and it’s
all good cleaner
I changed the water in the bowl just
give another little rinse and get all
the last of the ink off on it okay so
it’s not pretty clean it’s gonna pop it
on my board into my board I’ll get rid
of the water now Pat helped us dry just
so it’s not skidding around the board
right now the head just gonna pull the
skin off
that’s it okay I’m just going to trim
this little bit here put a sharp knife
so that’s nice and neat
then go that’s the head we’ll get rid of
the skin and now the octopus itself the
legs themselves it all depends what you
want to do with them you can keep them
in one whole piece if you like or you
can cut the tentacles apart like that
and there’s your prepared octopus
you
