How to Make & Pipe Royal Icing | Cupcake Jemma

hi I’m Gemma Wilson from crumbs and
doilies cupcakes in this video I’m going
to show you how to make royal icing from
scratch and then you can use that royal
icing to decorate your cupcakes even
cooler I’ve got 400 grams of sifted
icing sugar and 15 grams of powdered egg
white and then I’m going to add cold
water gradually we’ll just turn it on to
the minimum speed I’m going to start
with four tablespoons and just give it a
bit of a mix and see how it goes you
kind of really need a stand alone mixer
to stand there with your hand blender
for thirty minutes might be a bit more
boring you can see it’s starting to come
together a little bit I’m just going to
increase the speed a little bit just to
get a bit of a beating going on
what you want is like a stiff peak I can
tell it’s ready because it’s nice and
white it’s a nice sort of stiff to
medium Peaks in there see so we’ll work
that in a bowl you’ve got to be quite
careful with royal icing because it
dries really really quickly I’m going to
put it in an airtight container
straightaway yeah now we can get ready
for our piping extravaganza the first
thing you need to do is to prepare your
piping bag and I’m going to use a
disposable piping bag it’s quite a small
one snip the end off so that you can pop
your piping nozzle in there’s quite a
lot of extra action going on at the back
here so I’m going to just trim the back
of it off as well turn it inside out
like this so I don’t make a mess I’m
going to use a number two nozzle which
is a really versatile one it’s um just
right for writing and basic drawing and
stuff and I’m just going to pop it all
the way to the bottom just give a little
tug so the royal icing that you made
Earl is all safe and sound and tucked up
in its little bowl I’m just going to
take a nugget of it like a small golf
ball sized amount just whack it in
another bowl maybe a tiny bit extra good
measure I’m going to use a paste to
color it you can use liquid liquid is
more readily available so that’s got it
what it’s got going for it but because
it’s liquid it’s going to loosen up your
icing so the consistency is going to
completely change so we use color paste
here and I’m going to use me
really nice a little goes a long way
it’s super super super concentrated that
much or do you reckon give a little
wiggle
once the colors all even all the way
through it’s time to pop it in the
piping bag so just gather it all up with
your spoon euler there it is and now it
needs to go into the piping bag just pop
it right down to the bottom and then
kind of create a collar with your hand
and just kind of wipe all the excess
icing off and then bring back the bit
that you’ve folded back over and now you
want to twist and kind of push so that
all the icings right down at the nib I
put the twist over my knuckle so I’ve
got a really good grip on it and that
way also I can kind of squeeze from the
top and everything will just go down
rather than trying to escape out the
other side I’ve just got a bit of
greaseproof paper here and we’re just
going to use that to Python just to get
a bit of practice and I think you should
do this too just because it will really
help you understand how to control your
piping bag it’s handy to have a just a
napkin close by so that you can clean
your nip if by squeezing and wiping at
the same time I’m just going to show you
basic lines for now you want to make a
connection at the beginning and at the
end but in the middle bit I have it
about a centimeter away from the surface
and just gently pull and squeeze at the
same time and then lay the kind of piece
of string if you like wherever you need
it to go and then just end it with a
little point with dots you want to be
vertical with your pipe and you finish
it with a little down and up motion if
you dope again like a nasty little
people what you want to do is squeeze it
and pop it in
so the third shape you’ll make will
probably be a curve and again you want
to start with a connection bring it off
the surface because you’re gently
squeezing not I’m not pulling too fast
once we’ve got the balance right you can
use this like it’s a piece of string and
just drop it down wherever you want and
when you finish what you’re doing just
connect at the end like that so there
are the three main shapes that you’ll be
using with a piping tube let’s get
monavie so when you’re writing the same
thing applies making a connection at the
top and the bottom or the left and the
right of each part of the letter and
here’s all with a little bit using the
string method and then I’m going to
follow the curve of the cake to write
food tube on the bottom here that means
I’m going to need to turn my cake every
now and then just so that I can keep
looking at what I’m doing straight on
so there it is really cute decorated
cupcake using royal icing practice
practice practice you could be doing
things like this which is all loyal
icing on buttercream using different
sized nozzles so a smaller one for the
top there a thicker one for the bottom
and the filling yeah it’s really really
versatile you can make a little picture
amazing if you liked this video and you
