hello I’m Georgie from Jamie’s food team
and I’m gonna show you how to assemble
mini Scotch eggs to start I’ve got some
soft-boiled quails eggs this process can
be done with quails eggs or hen eggs
obviously you need some more meats I’ve
flavored my meat with some paprika and
not making it and I’ve got plain flour
some whisk eggs and some bread crumbs to
start you want to get some of the
sausage meat just a little ball about
marbles at large marble-sized make sure
you got lovely clean hands and roll it
out in the palm of your hand and what
you want to do is create a coating for
the eggs themselves so quite evenly as
you can you don’t be too precise but
flatten out the sausage meat into the
palm of your hand like this you want it
quite even about 6 and Smeaton’s and
then get one of your eggs pop it in the
middle and slowly bring up the sausage
meat around the egg pushing it all
around as you go and what you want to do
you want to join all the ends so it
coats it and make sure it’s completely
covered like that repeat the process get
yourself a plate and repeat that with
all the eggs so when I kept all the eggs
first with the sausage meat then when
you start panning them or coating them
in the flour egg and breadcrumb mixture
your hands are gonna get really mucky
and you want to you don’t have to keep
going back and forth between the two
processes so it’s easier to coat them
all on the sausage mix leave them to one
side and then start with the messy
process give your hands another wash dip
them in the flour the egg and the bread
crumbs and then what you’ll be left with
lots of little Scotch eggs which you can
just pop in your fridge in refrigerate
and so you need to deep-fry them
so to be completely covered up and I saw
such joy in all the way around so you
wanna wash your hands cuz you’re
completely covered in sausage meat
before you start the next process make
some space and you want to do this in a
conveyor belt style so make sure you’ve
got your flour your whisk egg your
beaten egg and your bread crumbs on a
line so using one hand if you can so it
can leave the other hand free and clean
to pick up the eggs as you go gently
coat the sausage coated eggs in a in a
thin layer flour you don’t to go crazy
shaking off any excess and then again
same again into the beaten egg hold it
up get rid of any drips and then same
again into the bread crumbs just fold it
around so you’ve got lovely coating hold
it up get rid of any excess bread crumbs
there you have it put it onto your tray
or into Tupperware container so same
again in the flour roll it around gently
into the egg get any of the excess egg
drip off otherwise it’s just gonna get
really soggy so you just want to really
like how to go back there and finally
into the bread crumbs
so now I definitely want to wash your
hands again and there you have it mini
Scotch eggs ready to deep-fry when your
guests arrive or put them in a
Tupperware container make sure they’re
covered properly all you need to do then
is heat some vegetable oil find them for
a few minutes you don’t want to keep
them in the fridge too long they or the
egg will make the breadcrumb and the
flour go soggy so you could do them in
the morning
so they’re ready to fry later on in the
evening and there you have it how to
prepare mini Scotch eggs
