it is barbecuing season and what’s the
most popular meat to cook up on your
grill it is chicken wok wok but so often
people burn the outside it’s still raw
in the middle well DJ BBQ is here to
give you some helpful tips on how to
master your meat now it all starts with
the barbecue we’re going to be rocking
in direct cooking so we’ve got hot heat
on this side come over here that’s where
our hot coals are and then over here is
the indirect side this safe area so
we’re gonna sear the meat on the hot
side and then if we get any kind of
flare-ups her into trouble we want to
cook it from the middle we move it over
to the safe side to the indirect side
we’ve got four beautiful chicken thighs
and drumsticks dark meat flavor bones if
you’re gonna marinade the meat shake off
all the oils man you get any kind of
oils on the coals they’re gonna flare up
and they’re gonna burn your chicken so
now we’re gonna put a lovely rub on
these garlic granules and onion granules
and salts maybe bit of brown sugar some
chilies oregano or Oregon oh man
first tip when you’re barbecuing see
you’ve got the fat on one side and
there’s the meat so you want to go fat
side down when you first put the meat on
the barbecue so here we go
we want to see it for about a minute
admit it a half and that brings all the
juices in there already want moist
chicken so we got some flare-ups you
know it’s too hot over there to calm
down the flames I’ll put the lid on
barbecues work with oxygen flow there’s
holes in the bottom there’s holes in the
top so when you put the lid on it calms
things down we’ve given each side of the
chicken a couple minutes of direct heat
so my moving away from the heat flip
everything and then I’m gonna put the
lid on and turn this outdoor grill into
an outdoor oven and make sure all the
meat is cooked from within now it’s
cooking all the way through
you can do this guys just get about
another ten minutes but keep checking on
it man watch your meat
time now to check our chicken man make
sure it’s got good coloring all around
perfect that’s the death color I want on
my chicken it’s important to flip these
things that way it’s cooked all the way
through other important tip tongs not
prongs see these things that’ll pierce
the muscle and release vital juices and
then it dries out your meat um you want
to use tongs and also have another pair
of tongs one for the raw meat one for
the cooked meat no cross-contamination
so we’re getting towards the end I
reckon these things eat about 5 to 6
minutes of cooking so now’s the time to
add the barbecue sauce it’s sweet it’s
smoking it’s cuz it’s dark sugars on
there but those sugars will burn add the
sugars near the end of your cooking
process and now want to bake that sauce
all over there we don’t have to burn on
want to cook on
I want all that beautiful sweet smoky
flavor all over this chicken
because we’re not over any of the direct
heat we’re not gonna burn the sauce
we’re not gonna burn the sugars let’s
close the lid and cook it on I got
another important tip for you guys when
you’re taking the lid off your barbecue
most people tend to just do this pull it
straight off like this that creates a
vacuum and then all the ash on the
bottom is goes put ash on me not good
you want to crack the lid like that and
then pull it off that way you don’t do
the vacuum no ash hits your meat and you
get meat that looks that beautiful look

time to eat our chicken off the barbecue
come on guys we’re now gonna check a
seat if the juices are running clear and
this bad boy is cooked Oh
clear no pink bits just beautifully
cooked chicken oh that’s good look at
that meat
perfectly cooked and really juicy mmm
