Molecular Cuisine: Cosmopolitan Drink Recipe

hi I’m Rebecca Braden and welcome to
watchmojo.com and today we’re at fibo
rasalla with chef and owner Sylvain poo
to learn how he makes a cosmopolitan
first ingredient is always vodka right
and then cranberry juice of course a
little bit of lime always through the
blender is some ice of course I want to
make it a little bit slutty so i’ll be
using some xanthan gum it’s just going
to jellify a little bit my stuff so
first serve together
I really want to freeze it so for this
i’ll be using less enough then liquid
nitrogen
minus hundred and ninety two degrees

there we go the idea is to create sludge

cappuccino foam for this i’ll be using
