when the time comes to pick a good
bottle of wine the decision usually
boils down to new world or old world now
while French Italian and Spanish wines
usually garner the utmost of respect
from wine connoisseurs Greek wine
doesn’t always benefit from that luxury
my name is ash can carbon solution with
watchmojo.com and today I had the luxury
of chatting with kaveh smelly Addison’s
George billy ada’s to talk about the
perception of Greek wine and how he’d
like to change it your president and
founder of cassis billy ada’s tell us a
little bit about it well cava spooly
alice is a company that I decided to
open in november i found that there was
a need of high-end greek wines in the
market for many reasons no need to go
into them people think Rick wine is his
low quality let’s seen our battles over
just a cheap wine and that’s not the
case producers have gone to schools in
France in pok though have gathered to
know how the techniques and they apply
it in the local
environment in Greece very flavor
favourable climatic conditions and soil
conditions and in the last 15 years
Greek wine has really evolved do you
imply that the new sort of renaissance
of greek wines are going to have a
french influence some of them do have a
French influence more in the technical
aspect of it however the tech wall the
climate is unique to Greece the grapes
are unique to Greece some of them do use
international grimmer varietals but
there are certain Greek grapes that are
unique to Greece so applying those
French techniques to the Greek grapes
brings a special result now what are
some of the personal professional exact
objectives you set for Calais Billy
Addis in the next few years the next few
years a personal objective would be to
have these wines in non Greek
restaurants on the wine list I would say
10 10 restaurants non-greek that would
have my wines and a more technical
aspect my objective also would be to
have to be on a general listing at the
saq and we take it from there wish you
nothing but the best with kaveh status
thank you very much question
