eating locally in the wintertime is more
colorful than you might think hi I’m
Barbara with watchmojo.com and today
we’re going to be learning how to make
chunky mushroom soup from the green
Panther welcome to the green panther my
name is Simon i’ll be your host for this
afternoon this is our kitchen all
organic all locally grown ingredients
we’ll start with the onions will heat up
the pan so basically what you would like
to do is you would like to chop the
onions really fine try to sharpen your
knives might help you guy a bit less
we’re gonna put all the chopped onions
together so we’re going to put the
onions to Saudi so we’re going to saute
the onion they will they become
transparent once the onion reaches
desired color we’re going to use time
add some bay leaves for the black pepper
what we’re gonna do we’re gonna toast it
may be round fresh it is about that much
XO man refined salt it’s important to
use unrefined salt it still has all the
minerals that were there when it was in
the ocean after the onions the potatoes
we’re going to slide the potato in the
middle then twice this stage we will add
the potatoes
I bit down this stage we can start
repairing the mushrooms these are
mushroom you can find in every local
store mushrooms in let them sit inside
let it sweat for around 15 minutes at
this stage we can start preparing for
the chunky bits since this one we are
going to blend and make it into a soup
we’re gonna take some garlic and we’re
gonna let them soak it oh well and this
ladies and gentlemen is how the mushroom
should look like once they’re done
sweating it’s gonna be good now we’re
gonna add the water and let it cook for
a bit cover it so the mushrooms are just
about done you can see they get the
golden it kind of look and they get the
right texture like this chewy texture in
order to see if your soup is already the
hardest bit in this soup would be their
potatoes so you wash them on the side as
you can see they’re soft we are going to
learn the Rays it before we blend the
rise it we’re going to pull out the bay
leaves because they are very fiber and
not very pleasant we’re going to try to
fish most of them out hopefully there’s
another one now if you’ll follow us
we’re gonna go and get our exciting
machine blender riser it’s not the size
that matters you can get a smaller than
the riser that will do the same thing
since we are vegan here and we cannot
use any milk product we are going to use
coconut milk this is not quite local but
so you check it well oh they tend to
separate all the fat goes up the liquid
go down don’t add it to the soup we’re
gonna add our chunky mushrooms give it a
good steer iguala one chunky mushroom
soup ready to serve parsley on top Bon
Appetit
