eating today well today’s a little bit
exciting because a certain person can
you see him yes general compared though

and he brought me some truffles baby
bear look at that big badass piece of
alien something it looks like a
meteorite unbelievable the classic
forage black truffle we are gonna do a
classic dish that is the most honest
representation of black truffles pasta
Bianco with tagliatelle simple a little
bit of cooking water butter a little bit
of nutmeg Parmesan couldn’t be more
simple so here we go into a pan we going
in from another what’s going on well I
quite like to do is when I was in the
middie Pyrenees in France the locals
actually cut the black truffle by hand
with a knife so it’s not it’s not shaves
okay so we’re gonna go a bit chunkier
I’m just gonna put my camera down here
let’s get my lemon out of the way I’m
actually gonna try and just slice this
up I want to do erratic different sizes
Gennaro you look like someone off a
crime watch in the background there this
is the way locals do it
much more on a rustic and chunky so
that’s going to go into Gennaro pan I’m
literally putting this camera in the

beginning of an emulsification of butter
the starchy cooking for a second so
we’re going with a little more butter
we’re going to add a little more water
there’s a couple of secret little
parmigiano Reggiano really beautiful
aged parmesan but there’s another little
secret ingredient guys this is the
Nutmeg right wonderful I’m gonna put
about four strokes of nutmeg in here and
then I’m just going to drag this pasta
into the plate a little bit of lemon
zest on a microplane tiny bit Gennaro
dynamite it’s not classic and a little
bit of pepper down a plate down a bit
so here we go thank you very much
