Turkish Chicken Kebab with Aaron Craze


this is my unbelievable Turkish yogurt
chicken red rice now I love a good ol
kebab
everyone does people say they’re greasy
and all that some of them are but if you
really go into the good shops you’ve got
really nice brilliant Turkish food going
on you and that’s what I want to display
today so we’ve got two lovely bits of
chicken right pop them out now I’m going
to marinate them up a little bit okay
just nice and simple bit of cumin bit KN
smoked paprika and then a little bit of
olive oil
nice big cubes mix them all up it’s like
a rocking front room look at that
beautiful now fit so on pepper okay
screw them up and then leave them to
marinate for about 20 minutes you can do
overnight if you want now I’m gonna get
onto the rice I’m using basmati rice if
you leave it to soak for half an hour it
goes nice and fluffy just get rid of
that water there don’t do this on the
kitchen floor I’m on a roof so it’s
alright right it’s time to pimp up the
rice green pepper that’s the noise
you’re looking for right there people
bit of oil let the peppers are dancing
around in it they get an excited man now
I’m going to do the onion there you go
now for a bit garlic so this is going to
give background flavor again
that’s what garlic does to a dish
keeping it real
look at that sweating down nice bit of
salt going in now just to help break it
down yeah it just brings out the nice
sweetness in there

dance when I’m cooking or love it don’t
tell me you’re not getting in the mood

right so in with a rice and it’s like
risotto and that’s red rice let’s not
forget that we’ve got tin Tomatoes I’m
gonna using one looking fresh now I’ve
got some chicken stock yup just gives it
an extra bit of flavor bring this to the
boil right let it boil for about 10 to
15 minutes put a lid on it another 5
minutes on a low heat take off the heat
leave it for five minutes
Bob’s your uncle you’ve got red rice now
I’ve got a nice bit of a space here at
the front right for my chicken it’s been
marinating for about half an hour now
right and it’s ready to make love to the
griddle pan QT music

right the chickens done I’m gonna put a
little bit of coriander in it oh that’s
good
I’ve got some nan bread here but you can
use old bread if you want to just use it
up that’s the whole idea of this now
just throw it on okay you want it to
crisp up my sleeve that is smelling good
look at that it’s come away nicely get
your chicken off your skewer chop some
of this up we’ve got our lovely natural
Greek yogurt we’ve got our chicken
sesame seeds pine nuts being put some on
after coriander fresh we got our bread
look at it beautiful I’m gonna put a
little bit of oil on there because I do
love olive oil and then some sesame
seeds some more pine nuts
you’ll get chicken with red rice make
such a difference the vegetables in
there give it a real nice depth of
flavor taste the garlic in there it’s
sweet from the tomatoes mmm mmm

using things up being outside getting
involved being passionate and not being
afraid to do different things
