what up foodtubers craft beer channel
with DJ BBQ doing a steak and ale pie a
wonderful autumnal dish just good
wholesome rad tasty awesomeness this pie
serves six to eight people I’m gonna
bring the meat and you guys are gonna
bring the booze but it’s all about the
ale that goes with the meat and what
have you guys chosen for us we’ve chosen
ourselves a stunning beer what we’ve got
here is a or Smith’s ESV what I wanted
to do is bring along a beer that not
only shows how far beer has come but
also where it’s been for several hundred
years cool okay well it starts with the
meat the steak so I’ve got some chopped
beef over here so I’m gonna brown that
off get that already in the meantime I
need you guys to start prepping our veg
okay so rad-brad to the right you’ve got
some onions you got three carrots I want
you to slice all that up and give the
I’m gonna put this guy to work as well
and me this knife right here Johnny so
you got four carrots you’ve got two
onions I’ve got some steak here I’m
gonna Brown it off I want to make a
really really big pie you got three
cloves of garlic just give it you know
finely chopped you’re pretty good with a
knife Johnny hey well we cook on the
channel man Ivan always always with
their so explain to me what makes a good
steak and ale pie
what’s the properties you’re looking for
in your ale you want something that’s
that’s hearty enriched when you cook
something this girl’s hops in it it’s
gonna be too bitter what’s Jenna’s gonna
cook down isn’t it you’re gonna say
something really sort of tangy and
slightly nasty so ya know no hops and
lots of sugar something sweet dog fruity
rich so tell me about the craft beer
cheddar what do you guys do we spend our
whole life traveling the UK traveling
the world just finding all these amazing
ingredients all these amazing Brewers
doing everything from sticking beer out
in the open air so that wild yeasts go
in all the way down to people just doing
how it always used to be which is just
oak casks mole a little bit of hot
lots of fresh water and the ingredients
to make beer are so so special so you
can’t help but have a very special break
at the end of it so we browned off the
meat it goes into there and now men
olive oil into the pan add your veg mmm
their job let them get to know each
other
please chop some mushrooms my friend all
right good man
okay so Johnny we’ve got 600 milliliters
of beef stock add that into the cauldron
whilst I soften up our veg can you
please pour in there 300 milliliters of
your tipple indeed yep all right so our
badge is getting softened up add 2
tablespoons of plain white flour to the
pan it’s not just a binding agent so
combine it you know you wanna eat
because you want to thicken things up
yeah I mean rad-brad yep pour use your
ale glorious sea angel should sing all
the time okay and now can you please add
the flat leaf parsley the bay leaf and
the time put that right into the
cauldron bring in the bow
okay the bouquet oh my goodness gracious
look at this this is really good okay so
that’s done this job and now we’re gonna
put all this in with the meat get in
there get everything in there rockin
okay
bring all these flavors out throw some
salt in there sculpt into the salt inch
yeah get some pepper in there grab the
lid my friend Johnny boom okay open the
oven that’s heavy that’s a lot of me man
so into the oven it goes for two hours
at 170 degrees Celsius for the last half
hour I’m gonna pull it out and put it a
tin of butter beans and 100 grams of
barley let it cook for an additional
half an hour just pull out our cauldron
of tastiness and for that last half hour
we added the barley the hunter grains of
barley and the butter beans make sure
the filling cools down because if the
quest goes on when it’s hot it’ll sweat
Johnny can you grab the tongs there and
pull out our herbs please okay I need
you Johnny to beat and eggs we’re gonna
do the egg wash we are gonna pour this
into the pie dish hide it
okay all right so wish wish us luck get
it in there it smells amazing doesn’t it
oh the heat so there is our lovely
filling for the pie but we still need
the pie bit the part that goes on top G
let’s go a little bit of a dusting on
our board so I don’t get any of that
pastry sticking to the wood nice because
that would suck all right so now we’re
gonna roll it out you know hit stand and
watch me run across beer channel tip if
you can’t find a rolling pin an empty
beer bottle nice a great substitute
man look at us the shortcrust pastry is
now the width of a pound coin but we
need to prepare things before we put
that pastry on top of this we’re going
to start with can you just give a little
brush around the edge of our pie dish
because we don’t want the pastry to
stick and I’m gonna throw this on top oh
now I want you men to put little
indentation and increase it yep put
those so it looks pretty so we can
impress the ladies and just cut all
around the edge with a knife I’m gonna
make some little leaves the crust is on
the leaves are done now we need to bring
the egg wash Johnny
paint like you’ve never painted before
this is where the real art is right yeah
this is real art it’s not the brewing
it’s not the baking okay finishing off
the egg wash that looks beautiful okay
there we have it the craft beer channel
DJ BBQ steak and ale pie this is gonna
go into the oven for 35 minutes at 180
oh my gosh men ohh looks glorious so
good oh my god there we go oh there’s
still loads more goodness to get in
there our spuds are gonna go just over
here cabbage here we have our pie we
have our Cavill enero and we have
achieved awesomeness dig in get stuck

around so good all those beautiful
flavors from the AO with the veg and the
onions and the garlic in the farm it’s
all coming together there’s real good
guys try this at home it is not as
difficult as it may look I know it’s a
bit of a long process but it’s actually
really easy to make and you get the
