Spooky Toffee Apple Fudge | Smith & Sinclair


hi guys welcome to foodtube I’m Melanie
and I’m Emile and together with Smith
and Sinclair and we make delicious
homemade sweets today we’ve got a
special Halloween treat it’s toffee
apple fudge it can be made any time of
year but it’s just a real great way to
surprise it trick-or-treaters so let’s
get all our ingredients in the pan first
we’ve got 200 milliliters of double
cream followed by 220 grams of
granulated sugar then we’ve got 25 grams
of butter a tablespoon of liquid glucose
you can get from any supermarket or your
local store and 20 milliliters of our
Apple reduction to make up a reduction
all you really need to do is get some
fresh apple juice get it in a pan medium
heat and reduce by half simple as that
and there should be a lovely certain
Sisseton C so we’ve got all our
ingredients in the pan except our salt
and apple juice we’re just gonna leave
that for the meantime and get all of
these onto a low to medium heat if you
should come have a look we need to keep
stirring this until all of the sugar is
completely dissolves when it is
dissolved and just leave it alone and
let it get to 160 degrees centigrade
that’s gonna take around five to 10
minutes
okay so that is done that’s reach 116
degrees so we’re just taking that off
the heat and then it come down to 110
okay so that is dropped down to 110
degrees and what we’re going to do now
is add a little pinch of salt gives it
that nice salted caramel taste and a
dash of clouded apple juice why so guys
this part is very very important we’re
gonna start really beating it until
you’re just dropping the temperature of
everything right down and that’s going
to be around 60 degrees centigrade the
more you beat it the smoothie approach
is going to be you’ll start to notice
when it gets really thick and it starts
to feel like the fondant icing and
that’s when you know it’s ready to go
we’re now gonna get that in our baking
tin this has been lined with parchment
just to make sure it doesn’t stick the
sides
it should come straight out of the pan
just make sure it’s all spread evenly
and there it is ready to set and to set
it all you need to do is leave it out at
room temperature overnight it’ll be
ready to cut in the morning okay guys
good news our toffee apple fudge is
completely set and it’s ready to be cut
and eaten
cut as big or as small drinks as you
want roughly don’t have to be too neat
here and then we’re just going to
present it on our tray of dried apple
crisps what we’ve done to make those is
just thinly sliced apple and left on the
lowest heat possible overnight to let
them dehydrate and here you have it guys
a beautifully presented toffee apple
fudge on a bed of Apple crisps and let’s
give it a try absolutely
so you can really get that toffee flavor
coming through it’s a salted caramel so
smooth and its really great to have the
contrast of the Christmas fall because
you have this nice crunchy crisp in your
mouth and a smooth smooth butteriness of
that fudge amazing contrast if you don’t
fancy apple or if you want to do this
recipe at any other time of the year
just replace the apple juice with orange
grape whatever you fancy guys you’ve got
