Perfect Paneer Jalfrezi | Maunika Gowardhan

hi foodtube my name is Monica welcome to
my kitchen I’m showing you how to make a
really simple and really easy when a new
child crazy it’s a beautifully spiced
Indian cottage cheese stir-fry with some
fantastic flavors of cumin chili ginger
and green peppers as well so we get
started so I’ve got a heavy bottomed pan
on medium heat I’m going to add a little
bit of oil to that and I’m going to add
a good heaped teaspoon of cumin seeds
and I just need to slice my medium onion
you want to sort it the onions and while
those are frying away I’m going to just
slice two cloves of garlic as well it’s
really kind of taking on the flavor
cause gel phase so one spice and one
fresh ingredient of layers or the
flavors feel really really nicely a gel
Phase II is inspired from the east of
India Charl in Bengali means spicy and
this is a spicy dry fry dish ok the
onions are softened at this stage I’m
going to add the spices a pinch of
turmeric a tea spoon of kashmiri chilli
powder this has a really mild flavor in
terms of heat I’m also adding nice
heaped teaspoon of coriander powder you
don’t want your spices to burn so make
sure the heat is medium to low I’ve got
some shopbot paneer here it’s almost
like halloumi I have actually soaked in
a little bit of warm water it kind of
makes slightly spongy and really soft
along with that I’ve also got my pepper
it gives a lovely crunch to the dish
you want all the spices to coat the
Capitals really nicely now if at any
point you feel like in the fan your
heads too high or the spices are burning
slightly the best thing to do is just
add a tiny splash of water and that
works really well because that’ll help
cook all the vegetables but at the same
time it’ll also make sure nothing’s
burning in the pan the peppers are
frying weight really nicely and at this
point I’m going to just chop up the
funnel roughly it cooks very very
quickly so you want to make sure you
don’t cook it for more than two or three
minutes gently stir the paneer in it’s
nice and mild so it’s actually absorbing
all the flavors really really well I’m
going to add one small tomato to it as
well
thinly sliced and along with that an
inch piece of fresh ginger so you don’t
need a lot just a few sort of slivers a
bit of lemon juice just to squeeze on
top and some fresh coriander so about a
tablespoon I would say no more than that
so it’s done you can see the penne is
nice and soft
the really sort of spongy texture so
that’s your paneer jalfrezi complete and
ready to serve I’m just going to garnish
with a little more coriander and some
fresh ginger
I have some fresh Piratas here so
they’re layered bread
hmm
it’s really cool you can actually taste
all the textures the fresh peppers a
fresh ginger nice mild heat of the
spices well along with the Indian
cottage cheese paneer try it
taste it delicious and absolutely yummy
and of course subscribe
