Mojito Cocktail Cupcake | Cupcake Jemma


hello YouTube is me Gemma and I’m pretty
excited because the sun’s out and I’m
going quite hot and I think it’s time to
go to the pool or the beach and drink
alot ales but actually maybe not drink
cocktails how about eating cocktails in
the form of mojito cup foods this is a
really tasty cupcake it’s sweet and
singie and minty and fresh all the
things that a mojito has especially the
rum which is obviously very good and
they’re really really tasty so I think
we should get going
let’s go I’ve got all my ingredients for
the sponge ready to go but first of all
I need to infuse some milk with some
mint so I’ve got a little saucepan and
I’ve got 200 milliliters of whole milk
just pop that in there and then a few
sprigs of yummy fresh mint just pop that
in and then what for heat on we’re just
gonna bring that to the boil right oh
there we go
boiling so just turn it right down to a
simmer let it simmer for four minutes
and then once it’s had four minutes pop
the lid on put it to one side and let it
cool completely and then take the mint
out and then it’s ready to use so I’ve
got 250 grams of self-raising flour 250
grams of caster sugar half a teaspoon of
bicarbonate of soda or baking soda and
then just sift that all together now I
need to test three limes just go
straight in
already smells good alright so that’s my
three limes ested now we need to put the
butter in so I’ve got 275 grams of
unsalted butter and then pop it into
your corner now just need for large
free-range eggs and then once the eggs
are in there just put the mixer on
straightaway start it on a fairly low
speed so it doesn’t all fly out and then
you crease the speed right so that’s had
about a minute now so just turn it down
to a minimum and then we’re going to add
one and a half tablespoons of the milk
and then one and a half tablespoons of
that lime juice give it a little blast
for about thirty seconds and then it’s
done so that butters ready to go I’ve
had a little clear down all that was
happening and just need to pop it into
tins
just keep on going until you lose all
your butter yay they go in the oven at
170 degrees C for 22 minutes right so
while the cakes are in the oven I’m
going to make some delicious mojito
flavored buttercream so all we’re going
to need for that is 300 grams of soft
unsalted butter get that going on quite
a high speed and beat it for three
minute
right it’s gone really pale that looks
really boudin yummy so now we just need
to add 675 grams of icing sugar which
I’ve sifted and I’m going to put half in
now and then half in a little bit start
on a low speed and beat for about three
minutes so now we just need to put the
second half of sugar in and beat for
about another three minutes
okay that’s looking pretty tasty but
it’s going to get even tastier because
I’m gonna make it in mojito flavor so
pop it on a low speed and measure away
using a tablespoon measure okay two
tablespoons of the minty milk okay and
then three tablespoons of gold rum and
then whack it up to a high speed and
beat it for another minute or two
right that’s nothing so lovely and
fluffy so you can see it’s gone really
pale it’s really fine it’s really mint
it’s if there’s mints really strong and
the rum is really sweet this is going to
be amazing my cake so just pop that to
one side and now we just need to wait
for our cake to come out and cool down
so you just touch them on the top and if
they spring back they out until you
ready take them out okay so my cakes are
out of the oven and totally cooled down
so now we just need to decorate them and
I’m going to put all mine in a piping
bag my icing so I’ve got a big
disposable piping bag here I just hand
over and then just start scooping it all
in just bring it all back over the top
twist it like this and I’ve got it kind
of wrapped around my finger because that
gives me really nice solid grasp on it
and just grab a cake stop working start
in the middle and then build it up
around the outside
these are pretty good as they are but I
think they could be even better so what
I’ve done is I’ve crystallized some mint
leaves all you need are mint leaves
obviously an egg white and you just
froth up the egg white so it’s all foamy
and then with a brush just brush it all
over the leaf and then just dredge it in
sugar and then just leave it to dry
overnight for a good 24 hours and it
goes all kind of couldn’t–they and
protein it just makes a really nice
alternative stool for decorations all
right that’s all my cake decorated and
they look so pretty
so there we go delicious fresh summery

that was a bit big mmm so delicious the
mints really nice and strong and
obviously the line in that the lime zest
is really coming through in the sponge
and then there’s that hit of rum in the
top this is a really nice grown-up cake
