LET’S TALK ABOUT CLOVES! | Jamie Oliver

lovely people let’s talk about cloves
baby I’m just on the set of Friday night
feasts I’ve just finished a recipe done
an amazing curry that’s been very
exciting and I thought I’d take this
opportunity to talk about cloves these
originally come from the maluca islands
just like nutmeg they come from a tree
fairly large tree this here is actually
a dried unopened flower now these little
things here are amazing we can get them
all around the world they’re now very
very cheap but that wasn’t always the
story the sale and trade of cloves go
back to before Christ they have been
some of the most precious things in the
world historically they’re absolutely
connected to sort of medicinal
properties reputed to be antifungal
antiseptic antibacterial prevent nausea
the people that used to speak to
Emperor’s and kings used to put in their
mouth to stop having bad breath you know
probably your nan said if you’ve got a
sore tooth chew on a clove so it’s kind
of amazing stuff some of the things I
love to do with these first of all I
love to get this in vinegars a big
handful of toasted hot cloves in a
little bottle of average white wine
vinegar amazing clove white wine vinegar
incredible in marinades and dressings
just get one cup of basmati rice and two
cups of water and a nice big wash a big
old wad of cloves quite a brave one
that’s taste it or like a heat teaspoon
you get the most incredible subtle and
perfumed rice and then at the end and
kind of cooking method just pushes the
cloves into the middle you just take
them off get rid of them and you’ve got
incredible rice I love bashing these up
with salt and and putting them with duck
or goose and slow roasting a duck for
like two two and a quarter hours at 175
rubbed with salt white pepper and ground
cloves and a little olive oil so good so
so so so good you can make amazing
cordials
and colas out of cloves you can grind
them up to a powder you know when you’re
sweating off onions and lovely game or
me or venison you know cloves are
incredible if you’ve got a vacuum
cleaner sometimes if you’ve got a bag a
good vacuum cleaner
you get a kind of bit of a stale smell
when you’re vacuum cleaning and if it’s
a couple years old it can kind of just
feel a bit stale so where you open that
bit up where there’s the bag just throw
a watch of these loose or in a little
muslin tie put those in that compartment
and close it up and then when the air
sucks and circulates and it’s all heats
up a little bit you get lovely gentle
clove smell I haven’t yet considered
putting a war of these in the bath but
you know what they’re cheap enough hot
baths few suds I am going back tonight
and I am putting a load these marinate
yourself in a hot soap studied buff all
go out and do it put it in the comments
box below and I think that’s the new
thing hands up if you have a close bath
don’t lie see the crew never line get
yourself some clothes run a bath and
before you even think about eating this
stuff bathe in it
you
