well he’s my mentor my London dad he is
incredible he’s a force of nature
and he’s a great great cook there’s not
much he doesn’t know about food I
remember when he was at the age of a
1450 it’d be 16 he came to me he wanted
to learn how to cook Italian and I show
everything I knew myself then together
we cooked a fantastic dish the guy is
crazy but he is brilliant the food he’s
gonna be focusing on is really great
rustic simple Italian food memory back
and I’m not joking I remember my mama
she used to do this on the Sunday lunch
lots of memories lots of nostalgia and

he was born you can see I was born in a
small village where the sea was my
swimming pool the mountain was my back

playground also was marking place where

fresh pure natural seasonal come on
smell it look at the way the fish all up
me with a smile minim ingridient maximum
flavor it’s crying out for the pasta
come on
sometimes he goes crazy and you might
not understand a word he’s saying but it
doesn’t matter because it’s all
happening on the plate and with the
hands and that’s what I love about food
because you do not need language you
just watch what they do it come on look
