hi there I’m Stephen and I’m David I’m
we’re the happy pair
we’re from Graystone’s County Wicklow
Ireland today we’re gonna cook for you
an Irish root veg shoe with a kale
colcannon mash okay so first thing I’m
gonna do is I’m gonna get my potatoes
and the boil so I’m just using simple
these are quite a waxy potato they’re
called and you’ll know we didn’t peel a
main reason why we didn’t peel them is
because most mental nutrients and spuds
are in the skin so now the potatoes for
a colcannon our cooking it’s time to
start our stew so I’m just gonna add two
tablespoons of oil into the pan so I’m
gonna start with the red onions so if I
use them right on your Dave well Steve
and I’m using red onions just cause I
like the colour so use whatever colour
onions you want
so now I’m just gonna chop four cloves
of garlic
and to get that real nice kind of face
flavor going on so now we’re gonna pop
in our carrots and parsnip
I’m gonna I’m gonna slice them up really
nice and fine the carrots are the
longest thing to take to cook in this
dish next up we’re going to hack up the
Pyrus up again I didn’t peel it the most
mental minerals are in the skin you so
now I’m just gonna add a teaspoon of
salt got a couple of babes in they go
and then we’re getting timing
Pyrus use quite are generally quite
herby so get your time and we’re just
going to take the leaves off the stem of
it now so now get your leak again say in
Ireland and England typically people
just use the white of the league versus
in Spain they typically use the green of
the leaf we’re gonna use the full
Orleans the leaf all of Zee leaked and
it is lush again hack the back off give
it a real good clean because leaks can
be a bit monkey and again I normally
split it down the middle like that
flapper age and then I kind of like some
chunks my leak there we go
in goes Z leak
now in goes the rest the green of the
leek or okay so in our version of this
veggie stew wearing white wine just to
give the sauce a bit more depth of flesh
just get a bit bit of sweetness and just
really kind of get those root vegetables
of sweetness them coming out or get that
nice sizzle no beliefs and so I put in
about a hundred ml of white wine and
again that’s just to really kind of lift
those bass roof edge and get that
sweetness coming out really accentuate
and get a kind of more sarafina’s to the
sauce okay so now we’re just gonna get
our stock on we’re gonna get us stuck
together so I’m just using a traditional
just a regular veggie stock you know in
an ideal world you’d make your own
veggie stock and you never twelve oh
what’s this is this is a 30 minute dish
so we’re gonna knock it out quickly so
I’ve got about a liter of veggie stock
here that I just added in so now we’re
gonna turn Olympus
we’ve rinsed them and drained them
already so when they go to the party
welcome to the party lads it’s the last
thing I’ve got to just got in three
tablespoons of tamari it kind of works
instead of their Worcestershire sauce or
something like this and shoes okay so
now we’re just going to turn her up high
and bring her to the boil and then leave
her a simmer away for about 15 minutes
just until the carrots and parsnips are
properly cooked and that’s it it’s
really simple okay so when the lentil
stew is cook and I’m just gonna finish
off our core kind of mush
so our potatoes at this stage are well
and truly boiled I’m just going to knock
them off the heat and I’m gonna drain
them and we love boiled potatoes so cool
can very traditional typical Irish dish
it’s pretty much boiled potatoes when I
stood and the powerful my kale
tremendous beast that is care so in goes
our 150 note oh of meld milk I just got
out no use whatever kind of milk so a
care we’re just gonna I’ve got a good
handful of kale take the can off the
stem and then we’re gonna chop it up
nice and fine then she goes
looks like loads but wait till you see
it’ll disappear with the heat of the
spud so I’m not cooking it either so now
I’ve got scallions I’ve just got a full
bunch of scallions and once again like
the leek we’re just gonna use the full
length of the stallion in goes the
scallion and then we’re just gonna mix
the whole thing up
okay so now I’m just gonna season it
with our salt and black pepper
to whatever your taste is I’m putting in
about half a teaspoon or so and black
pepper you know just add a good pinch
the black pepper is just gonna add that
kind of little bit of back of the
trophy’s so now we’re gonna season the
stew and we’re gonna chive a rope add a
bit of chive bit of garnish and then
plate her up and ready to go and so the
most important thing with season your
dishes just get down and taste it then
people say I don’t know how to season
but it’s like rope
okay used to taste really nice kind of
nice well-developed saltiness but it
just need a little bit of black pepper I
think from my palate so I’m just going
to add a little pinch of black pepper
but with season your dish it’s just to
kind of get familiar with if it doesn’t
connect a it’s trying to get that
balance make the dish but taste little
more balanced so about a little bit of
black pepper we’re gonna garnish er
which I’ve you could traditionally an
Irish stew would be kind of parsley a
current parsley so if you like parsley
flack it in if you don’t like curly use
flat parsley if you don’t like that
we’re using chive again just cuz it goes
well with the leeks Irish length we’ll
see you with a cool can of mash took
about 30 minutes to make super healthy
high in fiber low in fat low in calories
great for filling up for like a belly
hog
