Hunters Hot Pot Chicken Casserole | Michela Chiappa

hey you Mikayla here today I’m
going to be cooking an absolute classic
it’s called hunters chicken hot pot
chicken catcheth order a hearty hearty
dish full of flavor it’s very easy to
prepare and the best thing is it’s all
in one pot so it saves on the washing up
I’ve got here
four chicken thighs and four chicken
drumsticks those cheaper than the
chicken breast but it’s also I think
tasty so these need to be browned off so
a glug of olive oil and then a nice
tablespoon of butter and this helps that
chicken go lovely golden brown so let
that fully melt and then you add the
chicken so this should take about ten
minutes and while you might think ten
minutes is a long time for this to Brown
if you invest the time now this is where
you’re gonna get that all just color and
the richness reduces going into your
dish the rest of it is super easy
so they’ve been going for about seven to
ten minutes but you don’t have to worry
about cooking these through because
they’re gonna be cooked for another half
an hour in the stew but what you’re
looking for was a nice golden color
crispy skins and for all those lovely
juices to be released so I’m going to
put these into another plate and keep
the juices in the pan so the chickens
been removed to just create some space
in the pan and I’ve turned the heat
right down and we want to keep all that
lovely natural oils that came off that
chicken to cook our veg in so into that
now we’re gonna create our sofrito which
is basically one whole onion finely
chopped 1 clove of garlic – of salary 2
carrots and 2 sprigs of rosemary and
that all goes in at the same time do
just softening these veggies for about 4
to 5 minutes smile coming off that is
amazing
there we go the hard work has now been
done all you’re gonna add into there is
a tablespoon of tomato puree one tin of
chopped tomatoes and a nice splash but a
cup worth of white or red wine that
little stir so just let the alcohol
evaporate off about a minute then I’m
going to just give it a little bit of
seasoning with some salt and pepper add
my chicken back in don’t forget those
resting juices that’s extra flavor in
they go so there we go that’s come
nicely to the boil I’m gonna pop the lid
on reduce it slightly and leave it for
about 30 minutes to make sure that
chicken is gorgeously cooked through
keep an eye on it you know doing that 30
minutes if it starts to get a little bit
dry just add a splash of water other
than that that’s job done
this is one of my favorite meals got the
richness of those juices the flavors the
rosemary you can really smell and look
how tender that chicken is falling off
the bone and the last thing before I
plate up I’m just gonna grab a nice
bunch of fresh parsley
give it a little chop and sprinkle it
over the top just the smell of that just
finishes the dish off beautifully so I’m
just gonna serve that up now with some
hearty mashed potato and some seasonal
greens the flavors here so strong and
delicious that that simplicity of the
veg and potato is perfect there we go
and then just nice hunk of meat and some
of those delicious juices doesn’t get
much better than that just want to have
a dig in really ah those amazing the
flavors that that brings out with just
combining those ingredients is amazing
hearty hearty classic dish which is just
full of flavor and if you like this
