these are a little bit controversial but
I promise you they will be well worth it
stick with me we’re going to make maple
bacon buttermilk scones totally
delicious and so worthwhile making to
kick it off I have some plain flour
going into the bowl with our raising
ingredients so I’ve got a bit of baking
powder and also some bicarbonate of soda
so it’s a teaspoon of bicarbonate going
in here that should do me nicely and
then of course we have some butter and
basically all we’re going to do is
combine them there’s a few ways you can
do this you can by all means go in with
your fingertips and get this pushed in
together until you get a nice kind of
breadcrumb mixture but I have this
fantastic that will implement which does
beautiful things for pastry and make
sure that you get a wonderful cold
butter throughout your mix so get that
in there and just press the butter into
the flour now I came across these
beautiful lil scones on a trip to New
York and I’ve been making them ever
since there are true winner with my
friends and family and I love making
them on a Saturday morning where there’s
nothing else going on in the kitchen
okay this is looking good once it’s
start looking like kind of rough bread
crumbs and you’ve got little rogue lumps
of butter in there this is the time
where we’re going to add in our wet
ingredients so lose that now create a
little bit of a well in the center of
this and what we’re going to pour in
here is some buttermilk and of course a
lot of maple syrup we’ve got a good
amount of maple syrup going in here and
now controversial ingredient but totally
essential we’ve got some salt and bacon
in here beautiful crisp top in a frying
pan and it adds wonderful texture and
that beautiful hit of saltiness in
against that sweetness of the maple
syrup using fork now just mix that
together just bring in the dry
ingredients into the wet ones and once
it’s starting to come together like a
rough dough at that point we’re going to
turn it out onto a floured surface and
just roll it out into scones
just make sure that it’s completely
flowered all the way over and underneath
grab your rolling pin and just give it a
nice light roll and you’re looking to go
about probably an inch in thickness here
use a cutter and just cut out little
shapes now if you find it sticks like
that what you can do is just dip it
straight into the flower and this will
ensure that it comes out nice and easy
sprinkle a baking sheet with a little
bit of flour does it just make sure that
they don’t stick I’m probably won’t but
it’s worth what I’m doing anyway and
then transfer all these little babies
over
okay the rest for about ten minutes in
the fridge and then they’re ready for
the oven
now all I need is egg these little
babies up and it’s important that your
dog’s through the tops because if you do
the sides what happen is they won’t rise
as good communication and now just break
up with a good pinch of sea salt on the
top sounds very strange bought a stock
hint of sea salt bit of crunch on the
top against that beautiful sweet maple
syrup in there so 180 degrees Celsius
350 degrees Fahrenheit 25 minutes and
you’ll get something beautiful
the combination of the salty bacon and
sweet scone works perfectly and the
texture is incredible you’ve got to try
this now guys and let me know how you
get on
you
