How To – Best Bloody Mary

morning lovely people welcome to
jamieoliver.com this is the breakfast
special and today for those lonely
mornings after one too many when you’re
feeling a bit rough a Bloody Mary
to pick you up and put you back into a
good place in actual fact Bloody Mary is
good for any time breakfast lunch or
dinner the other day I had the best one
in my life yes I am biased it was in
barbacoa which is one of my restaurants
I can’t take any credit for it it’s a
cocktail boy there who is phenomenal and
they worked out a Bloody Mary that is
kind of like rock-solid but completely
different to what I’ve done before and
it rocks the party I’m telling you it
rocks the party before we jump into the
Bloody Mary recipe we got some curve
balls coming in here that make it
incredible so we’ve got the jalapeno
vodka great we use a bit of barbecue
sauce come on we’ve got some barbecue
rub that we put on our pork butts right
which we use instead of celery self come
on
so just get some barbecue to occasion
rub you can get it from all supermarkets
there’s different varieties but they all
kind of have generally the same kind of
spicy oniony sort of salty hit okay
we’re going to use the classic
Worcestershire sauce in Tabasco not that
we’ll be needing much of that and
gherkins or as we call them in Essex
Wally’s okay the other little curveball
is this is too thin I apologize but go
to your butchers and get a double thick
slice of smoked bacon in barbacoa we
smoked them in our smoker in our Texan
smoker for nine hours god
it is incredible let them cool down let
me give you the quantities for one
Bloody Mary dead simple 150 milliliters
of really good-quality
tomato juice 150 milliliters okay then
we’re going to go in with a pinch of our
barbecue rub right you can get that
occasion rub you can get that in pretty
much any supermarket okay or even make
your own alright we’re going to go a few
drips of Tabasco but let’s be frank you
don’t need it right so one little humble
drip just to say salute to Louisiana and
all those beautiful chilies
we’re going to go about 20 meals of
barbecue sauce okay one spoon goes in a
shake of Worcestershire sauce and then
about 50 mils of your jalapeno vodka
that much a little squeeze of lemon
juice and a good old shake have another
little taste
okay oh yeah now you just never stop
otherwise okay then very quickly before
that ice melts we’re going to click off
the celery okay we’re going to go for
the heart of the celery here this is the
bit that you want that’s the best bit
we’ll split that in half
heavenly we’ll get our pickle from here
and let’s make this bad boy
so pour your Bloody Mary into your glass
so good then going to go in well then go
in with our gherkin and our celery and
our crispy wedge of smoked bacon finish
it with a little garnish of the barbecue
seasoning yes there’s part of this it’s
slightly weird and slightly odd there’s
a piece of bacon in my drink
but bizarrely bizarrely it tastes great
