
hi everybody my name is Amber Kelly and
today I’m here to share with you one of
my favorite veggie side dishes this is
my green bean salad with slivered
almonds and a teeny mustard vinaigrette
and what I love about this is you still
got the snap to the green bean the
nuttiness from the almonds and then
you’ve got this really creamy pain I
love spicy vinaigrette it just makes
this whole thing so incredible and the
best part is it’s pretty easy to make
let me show you how to do it first thing
you got to do is prep the green mean now
there are two ways you can do this you
see that little stem on the end we don’t
want that you can either just snap it
off like that or what I’m going to do
today is just line them all up like this
and chop off the tips and the bottle
pain we’re all so different about them
in half now we’re going to steam our
greedy so our water has come to a boil
and I’m actually going to be using this
little steamer basket thing we have and
we’re just going to pop these in with
the lid on for about 4 minutes and we
don’t want them to be mushy you want
them to be really bright green and
they’ll be partially cooked which is
perfect while the users learn we’re
going to prep the rest of our
ingredients starting with 2 tablespoons
of chopped parsley next step we’re going
to cut our shallot now we’re going to
make our vinaigrette this is very simple
all we need is some olive oil red wine
vinegar and Dijon mustard so good in the
juicer makes it so cream does need a
little bit of salt and pepper though so
we’re going to season 15
seriously guys you only need a little
bit of dressing this goes a long way
it’s so flavorful now I’m just going to
toast up some almonds for a nutty crunch
so I’m just going to turn my pan on and
pop these in here in my family we always
burn the nuts and we’re toasting them so
I’m not leaving this pan side until they
are golden brown and you can really
smell the mint later it’s been about 4
minutes so I am going to try one of our
green beans look how bright greens are
it’s absolutely gorgeous it’s perfect
we’ve got a nice crunch to them what I’m
going to do is throw the green beans
into the dressing now I’m going to add
in my parfume my almond and my shallot
now we just got to mix it all together
Oh smells so good you can really eat the
salads whenever you want hot cold room
temp it’s delicious no matter what and
also I always like to make a little bit
more than this so that I have leftovers
because I think it’s really good the
next day this looks amazing
look at this got all these different
textures oh my gosh
you have to it’s incredible it is
probably on my top three ready side
dishes ever ever if you’re ever looking
for a dish to go alongside your main
meal this is the one I’ve eaten so much
fits almost a scone right now so if you
