I am always on the lookout for a very
quick weekday dinner and one of my
favorites at the moment has to be this
lemon and mint griddle chicken with some
washed chicken a tasty food soups offer
if you’ve got a few mates around it
looks great it’s all the flavor and best
of all it’s made in minutes I’m going to
grab some mint conveniently located in
my garden so few mint leaves I’m going
to finely chop that with some lemon zest
a bit of lemon zest right lemon a mint
all sorted so what I need to do is now
transfer this over to a plate and we’re
gonna get our chicken breasts and bash
them to do that I have some parchment
paper and we’re going to basically place
our two chicken breasts in between some
parchment paper so one sheet and do
sheets so lay down your chicken breasts
one at a time and then sprinkle over
that lemon and mint all the way over you
want your chicken breasts to be
completely covered in it and then using
a little bit of oil just drizzle that
right over your chicken breast seasoned
up with a bit of sea salt and black
pepper and such fresh flavor going on in
here this is the sort of summer little
dish that you’re going to get excitedly
so what we need to do now is place over
our second bit of parchment paper and
now we’re gonna grab a rolling pin and I
think in the style of Jamie Oliver we
are going to bash the crap out of these
chicken breasts so give it a good whack
you’re looking pretty good now the
reason I’m bashing this is to make sure
that we get nice quick cooking chicken
breasts it makes it really really simple
it should be a better centimeter in
thickness
so beautifully bashed now what we need
to do is lose this sheet of parchment
paper and just drape all that chicken in
those extra little bits so each side is
evenly covered in all those lovely oils
and lemon zest and then once they’re
coated these go straight into the pan
got that sizzle so once they start to
cook through just give them a quick flip
and turn them over time to take off my
chicken breasts so just transfer them
over onto a plate like this and while
they’re off what I’m going to do is get
on a frying pan and we’re going to fry
up some chickpeas nope the best way of
doing this is to use tin chickpeas it’s
a really quick store cover ingredient
get a bit of olive oil into the pan so
good quality olive oil goes in here and
then very quickly we’re going to get our
chickpeas right in there now the spices
I’m going to add are a little bit of
cumin and cumin and chickpeas are the
best of pals so get some in there and
then just a little touch of smoked
paprika really really nice hit of color
and a bit of subtle spice and then using
the rest at lemon the juice of the lemon
what we’re going to do is just pour it
in a good bit of lemon juice in here and
basically this is kind of like a warm
hummus it’s kind of a bit strange but
very delicious alongside our chicken so
what I need to do is take this off the
heat season off with a little bit of sea
salt and some black pepper and then with
the back of a fork just press this down
almost just crush it now it might look
like a mushy mess right now but this is
going to be properly delicious really
really simple and if you like simple
recipes by all means subscribe to my
dishes right here on Jamie Oliver’s Food
tube there’s lots more to come really
tasty stuff and of course if you like
this leave me a comment below because I
will answer I do promise you that so get
this in onto your plate and then we’re
gonna serve this off with a few little
dress leaves
and those local chicken breasts and
there you have it one of my favorite
little suppers it’s a lemon and lint
griddled chicken I want you to get in
there and taste this this is totally
delicious subscribe comments do all of
those things and most of all try this
