Getting kids cooking – meatballs, pasta & tomato sauce

welcome to jamieoliver.com my name is
Jim I’m the website editor for Jamie and
today we’re gonna do some cooking with
kids so I’ve got a couple of helpers
with me here this is Oscar say hi hi
this is Jude say hi this is all about
getting dad’s cooking with their with
their children so what we’re gonna cook
today is meatballs in a tomato sauce
with spaghetti it’s a really simple dish
first up we need to bash up just normal
cream crackers
these are good so dude you want to put
those in the tea towel in like that and
get smashing look how have you done now
it’s pretty good now we’re going to put
the meat in a bowl ready to mix so we’ve
got 250 grams of beef good quality be
from your butchers already minced and
250 grams of good minced pork also put
these in a bowl JooJoo want to pull the
crackers in chuck them in some vice okay
and we want some herbs to going with
this as well
so Wolfe we chose we’ve got rosemary and
we’re going to strip the leaves off that
go from the top that’s it that’s nice
and not school you got that I’ve got
some Oregon okay so we’re just gonna
take some leaves off the Oregon put them
with the rosemary right put them on a
chopping board now – you’re gonna chop
these can be very careful okay always
make sure the blade is on the board chop
chop chop I said so I’ll just help you
out there boss good you want to crack
the egg into the mincemeat nicely done
okay do you want to put the herbs in
there as well and we’re just gonna go in
with a teaspoon of mustard as well use
Dijon mustard cuz it’s not too
overpowering
Donna pull up and we want to season it a
little bit bit of salt please Oscar and
dude you wanna put a pinch of pepper in
as well okay both you get stuck in it
mix it all up
Bess there we wet hands oh so doesn’t
stick careful with your eyes after doing
this
obviously because there’s mustard in
there okay and now about golf ball sized
balls I reckon get rolling nice and not
too tight
that’s pretty good that’s it okay so
we’re gonna put these to the side put
them in the fridge we’re gonna get all
this out of the way and wash our hands
spot okay we’re gonna make the tomato
sauce now first thing I need to do I’ve
got the pan on the heat I’m just gonna
give it a little bit of olive oil not
too much though one small onion it
doesn’t have to be cup two small fish
you’re obviously cooking it down okay do
you want to tip that into the pan yes
let’s get it in there
listen to that sizzle gorgeous take a
clove of garlic each off the bulb in
with the first one okay tooth comb yours
there we go
cook these onions on a medium to low
heat for about five minutes or just
until they’re nice and soft and sweated
down but don’t burn them okay so onto
the tomatoes you want a kilo one
kilogram of tomatoes that should feed
about eight kids or a family of six
we’re going to quarter them that could
go in whole or you could have it it’s up
to you turn now that’s it these are it
will stir around just have a bit of
nerve faction one on one I think I won
Jade you can now come and help
nice to just turn up a little bit okay
uh come in sit lovely sir
look beautiful don’t waste any other
that’s what’s gonna make it nice and
juicy give it a mix round you want to
get the basil and we want a slosh of
Redwine vinegar to go in to help make
that sauce that’ll do
okay you want to pick the leaves off the
puzzle but the little ones to the side
okay that’s enough put it down there
put some bars on the side as well to
garnish in the end because it can be
really lovely aromatic flavor okay so
we’ve got a good handful of chopped
fresh basil you want to chop that in it
would be my pleasure
we’re gonna go the little bit of pepper
oricon not too much don’t need to salt
so now we want to get the pan going
ready for the meatballs get that on
again a medium heat little splash of
olive oil wait until the pan is a bit
the oils fairly hot because you don’t
want to go into cold oil leave this
sizzling away now they should take about
the same amount of time to cook right
okay don’t pop those in not so carefully
the fingers looks good and what you want
to do is you want to Brown these on all
sides so if they’re browning too quickly
just turn the heat down these will take
about 8 to 10 minutes to cook through
obviously the bigger they are the longer
they’ll take to cook and vice versa okay
so these meatballs are done now so we
just want to get those into the sauce
one at a time they’ve been cooking for
about ten minutes now sauce has been
cooking for about 12 we want to get 500
grams of spaghetti into our boiling
water and it goes almost ready to serve
a lid on it
okay so you cook spaghetti eight minutes
we’re just gonna drain it now okay chuck
it in there tip it up that’s it Wow
nearly a disaster
carefully move it to there smooth this a
bit close up that’s it
it’s lovely
look at that lovely okay Joanna grab the
puzzle for me just around the sides a
little bit okay we’re gonna serve up
this absolutely beautiful looking bowl
of food look at that
so we reckon about three meatballs per
child is more than enough here we go and
some sauce hold on this gets a nice
tomato on there well look at that
gorgeous
that’s yours get ready for the parmesan
bring it round here you only want to
leave scraping just to give it a light
nice bit of seasoning okay getting kids
cooking fresh food from scratch perfect
so that is our very simple meatballs
with a tomato sauce on spaghetti would
you reckon
