Crispy Roast Duck Wraps | Jamie Oliver

we’re going to do a wicked dish now
we’re going to do crispy roasted duck
we’re gonna make a cracking dress in
we’re going to make little pancakes with
a crispy iceberg lettuce and you’re
going to love it absolutely love it so
there’s one rule that I use time in and
time out basically get yourself some
five-spice you can get that from any
supermarket get your duck and rub it
really generously all over and inside
with five spice and salt put it in a
roasting tray get your oven at 180 and
cook it for three hours okay three hours
it’s perfect every single time
you always know when a duck’s good when
you can go to pinch that thigh meat and
it just comes away like that right
sliding all over the place but lovely
beautiful crispy skin tender meat okay
so what I’m gonna do is just let that
sit for a second okay iceberg so what I
want to do here is take it apart right
so we’ve got these beautiful little cups
right I want to use these as the wrap
since the pancakes right really crunchy
is going to be beautiful the duck is
already five-spice crispy skin delicious
meat but I want to kind of receive the
duck and make it as delicious as I can
I’m using mint a little bit of coriander
you want the stalks and the leaf a
little bit of chili so just put a third
or half a chili in there to your taste
chop all this up so now I’m just going
to put some olive oil in there about two
tablespoons we’re going to use seasoning
in the form of soy sauce about a
tablespoon and then we’re going to hit
it with lime or lemon squeeze that in
there whatever we put in here is going
to be delicious
okay the duck let’s see what they do in
the Chinese restaurants two forks always
go for the legs first if you just go
where the joint is you always know if a
duck is perfectly cooked
if one the meat just falls away from the
bone and look at that bone comes
straight off right and the skin is
crispy what we want to do is just pull
all this lovely duck by just two forks
like that
[Music]
and then you can start getting your
hands in there and we’re going to
literally dress it in all that stuff we
chopped up tape some lovely coriander
amazing now I just want to kind of pimp
some hoisin sauce hoisin sauce you can
bought in all the supermarket’s get one
garlic clove bang it in the pestle and
mortar put a bit of extra chili in there
a few little bits of mint or coriander
will really bring to life that sort of
everyday hoisin sauce you know you make
it extra extra delicious so much more
electric and tasty hit it with lime
juice and I put it in the middle of
table you know I’ve roasted the perfect
duck and I’ve dressed it so you push
that in the middle of table right you
take a lovely little bit of the lettuce
you put the lovely melt-in-your-mouth
dressed duck inside take a little bit of
your pimped up hoisin sauce and then get
yourself a pomegranate right and the
thing a lot about its out little
capsules little cap through the
sweetness just put a pile there but have
a look at that guy’s roll it up that is
one of my favorite mouthfuls it’s
absolutely delicious it’s got everything
crunch it’s electric it’s got the lovely
melt-in-your-mouth meat so so good hope
you enjoy it take care if you love this
