Awesome Wedges 3 Ways! | DJ BBQ


what up guys it’s DJ barb what too much
okay um just better kind of we’re doing
potato wedges three ways really simple
fun tasty dishes in honor of the Super
Bowl everyone loves the classic american
french fry they have kind of evolved to
the potato edge so we’re gonna do three
great tasting potato wedge recipes one
really simple and two with a special
twist and of course one’s gonna have to
have some cheese cuz they’re they’re
tasty treats
so let’s chunk these guys up I like to
leave the skins on and there’s loads of
flavor in the skins nice sized chunks
just like that there we go yes you want
to see I’m using five spuds which will
serve about four to five people so we
got the chunks there in there I’m just
gonna drizzle a bit of olive oil in
there we grab a little bit salt just a
little bit kind of go sweet with the
olive oil a little bit of spice with
some paprika so I’ve got in the oven
with Han it’s already hot and now I’m
just gonna put our wedges
straight onto there so I’m just gonna
make sure these guys are spread out all
that surface area gets cooking smells
good already
that paprika is popping we’re gonna put
these bad boys in the oven at 190
degrees Celsius about 35 minutes they’re
done when they’re done
okay let’s now prepare the flavors this
seasoning for our wedges three ways
starting with a dipping sauce so we’re
gonna go with a spoonful of yogurt we’re
gonna do a spoonful of sour cream so mix
those guys together here’s the clincher
you guys ready for this
it’s like Mexico in a jar it’s called
pibil they use it in chicken tacos pork
tacos this count ground cumin ground
coriander vinegar orange juice tomatoes
it’s just oh my gosh oregano this stuff
rules you can use any chili
you know sauce or hot sauce Sorachi you
know so there’s our dipping sauce and
I’m gonna throw some chives on there
make it rain chives hit his love chives
cow cheese we got some smoked Ghouta and
some cheddar give these guys a bit of a
shred and here’s my smoked Ghouta I’m
gonna put both cheeses on there as well
about 30 grams like Monterey Jack I love
like smoked Applewood you know
Cheddar’s and things like that you can
use mozzarella cheese curds if you want
for my friends north that’s right I’ll
talk about Canada you guys roll up there
if you guys like poutine man you should
check out my poutine video I spiked it
with bourbon and maple syrup so I kind
of you know threw props to you guys and
to my kind of Southern roots heritage
with the barber
we’re gonna go with sea-salt so that
goes in I got some rosemary sprigs such
a good herb man really good on potatoes
man so I’m gonna finely chop these guys
up boom as the Spice Girls said when to
become one we got our our cheese’s we
got our rosemary salt and we’ve got our
dipping sauce and those wedges have had
35 minutes of time to get him out of the
oven look at these guys oh my gosh look
at golden brown crispy just beautiful
now I want to get the cheese on right
away get in there guys
get a little handful and you’re gonna
melt in there come on do your magic so
while they’re melting I’m gonna throw
these guys into the baskets good ooh
these look really simple man you’re
making snack food and like you know 40
minutes and then you know you’re
impressing your friends influencing
people having a good time spread a
little bit of rosemary salt on these and
then we got the dipping sauce for those
guys all right there we go we are two
cheeses rockin on these potato wedges
the rosemary salt and the knees are
plain but they’ve got that lovely little
pool of flavor yogurt sour cream chives
and that kind of spicy Mexican paste
kind of strewn throughout we are ready
to watch the game you got excellent
snack food didn’t take long at all my
friends are gonna be stoked they’re
gonna have a cold beer in one hand and a
tasty potato wedge in the other if you
