
when I turned 30 I toured around Italy
in my camp about cooking everywhere I
went I did some amazing things which
changed my life forever and I’ll never
forget it the island of Moretti moan
couscous this was mad I was in a little
fishing village that I’ve heard about
and before I knew it this bloke took me
into his mum’s house and I was cooking
in the street enjoying it can’t believe
that you can literally ask a bunch of
people they said oh they just go and ask
and they’ll let you in they’ll probably
cook it with you if you want see me oh
my god okay and again I say see capito
she’s actually making the couscous I
thought she’s gonna get a packet out I
always knew that semolina made couscous
but I’ve never ever made it homemade I
bet you think I’m mad what’s the fuss
all about you can just buy couscous in
the supermarket ready to go but making
it from its raw ingredient semolina
was something I’d never seen before and
the geek inside me needed to know how it
was done you’re that’s easy very simple
you add the water to the semolina and
you keep moving it it’s gone from being
wet to sort of a bit like chewy now I
guess as far as semolina is concerned
you can’t get much closer than that
Vinnie done see I’m really proud of
myself a fantastic okay so she basically
said it needs condiments olive oil
garlic parsley salt to go with it and
then it’s ready to cook so peel the
onions Mama’s watching into cause II
jungle child hostesses a brow brow in
sedation and the mum is telling me she
knows she knows little English boy
quacking glazy stupid or not a very
silly stool with it this is like my
heaven actually just I’ve always wanted
to learn how to make couscous which we
always buy you know the fact that she’s
bought semolina she’s made it by hand
you know the fact that these little
granules are not like factory uniform
sizes that there’s sort of sizes is
absolutely fantastic little bit of
pepper
so dr. quad danger
actually wants me to put this in raw
garlic raw onion and the mashed up
parsley so I think trysting mix is a
lotta good stuff
7 tablespoons of olive oil well no goal
in mind gunk waster per funeral boner
wanna wanna warn amor daddy oh wow is
that why I’ve been done a little
miniature steam will come up here into
here and and very gently steam the
couscous and it’s quite thick as well so
it’s gonna be quite a gentle steam well
nada one hour
Wow so umm but when I’ve done couscous
before it’s been about 20 minutes half
an hour 1 hour slowlyslowly
everyone’s got time here slowly sick
sick sick sick so I’m putting the
couscous into this bowl now of course
you could do it in a fine colander ah
see get get get a little hat wet sorry
hang up over there
and then that will keep it nice and damp
oh of eyeballed it ah probably in
love with the posse fan water or
semolina semolina water and you just put
it together you got playdough
the mist aqua and she’d uh I’m an even
tasted this yet but I know for a fact
this is gonna taste fantastic because I
can smell it when it was all mixed up we
needed to cook it but you can never be
in a rush to eat in Italy what looking
at Edinboro she city stays very hot look
at that man
