Aaron’s Chicken Wing Lollipops & Homemade Cranberry Sauce

Merry Christmas
boo – OH panel look ridiculous yes I’m
gonna help you kick off that Christmas
party with a great share and pass up
Christmas chicken lollipops the
cranberry sauce
you just have to compy them put them on
the plate and you don’t even have to
have teeth to eat it grandma a confit is
the process of cooking and it’s slow and
it’s low and it’s an aromatic fat or oil
okay so that’s what it is you’re not
frying it’s not really high you think it
really really low got some duck fat here
all right let’s get that in there
got some bay leaves well in about three
of those a little bit of time just like
that boom it’s already looking
Christmassy some peppercorns a little
bit spicy going on and then some juniper
there we go
some of that in there now they’re just
infusing in today so I’ve turned up
about quite high to start off with just
so it all melts down and penetrates in
now turn it down really really low to
low she can go on your cooker all right
and then it’s ready for your chicken
I’ve got chicken wings going on here I’m
gonna French trim them that’s what they
go into it like after front of my face
you can look at me still we want to make
that out of this so there’s a little
knuckle here see that went through
really quickly look at this there it is
right there
we’re just literally pushing all this
down to the bottom she’s got that lovely
little sort of Christmas bell look over
there okay
so you’re just releasing it from the top
of the knuckle there okay and it’s just
you want to get a knife away from
yourself yeah let’s just release it okay
look it’s free now turn it around away
from yourself again all right you just
scraping it like that look at the top of
the knife just about that lovely looks
like a little bell look at that
hear ye hear ye you do that it doesn’t
mean only not forgetting these little
babies okay you can deep-fry them you
can grill them lovely buffalo wings yes
so keep them and really good food oh
there she lay out so I want to pop them
into the oil like this let’s get the
last few in there lid on let’s keep that
lovely flavour in there it’s steaming up
and it’s just cooking away for about two
two free hours depending on the size of
the chicken wing okay so we’re gonna
make some cranberry sauce now
all right homemade stuff I can hear you
shouting at the screen right now
Walter dude I’m just gonna buy it man
yeah well man it’s much more satisfying
to make it yourself at home
cranberries look at those you know when
christmas is here when these little
babies appear here we go in they go whoo
cranberry juice I’m using Jam sugar this
will help it set I’m just gonna sort of
cover it like that orange peel lemon
peels let’s get a little bit of that in
it beautiful bitch in you always got a
bitch in knocking around open conversate
is Christmastime now I’m just gonna
reduce this and to help that thicken up
I need to squash them a little bit so
you’re releasing all the juices and
flavoring it so just very softly squash
them like that already it’s looking like
a little Jam look at this can you see
the way it’s all smashed up and crushed
up big fat bits like that they’re gonna
stick on to the chicken mmm delicious
right so that’s been simmering away for
about one or two minutes now and as you
can see all the liquid has evaporated
look and you’re left look at this bit of
that right and then just run your finger
through it when you get that little
pathway and it doesn’t come together you
know it’s ready to rock and roll just
pop it into a little jar there you go
ready what we got to do now is they cool
down pop it into the fridge
[Music]
voila ready to go look at these May oh
my goodness look at that
who would have thought before people
just throw D’s in a stock like a little
babies
look how golden brown that is all they
need now is a little bit of salt now why
I just put a normal salt and make it
really boring when you can put a flavor
in there I’m gonna put some rosemary
chop it out first okay get the old
pestle and mortar pop him in think about
the array show you want about 2
teaspoons of salt 2 1 teaspoon of
rosemary I reckon
okay so literally pound it
that’s it how simple is that look it
looks quite Christmas here as well yeah
just gonna season it up now here we go
last bit of cranberry sauce on there
there we go my Christmas chicken
lollipop day look there’s your disguise
