hello lovely people okay I’m gonna give
you five incredible recipes to celebrate
the humble veggies the first recipe
we’re gonna do is the most amazing black
bean soup that I learned in Costa Rica
with poke eggs it is so so good
get some celery roughly chop it in a pan
two tablespoons of olive oil we’re gonna
go into the celery garlic we’re gonna
get some time here two little bay leaves
2 finely chopped onion about half a
chili goes in then peppers we love our
peppers a nice little pinch of seasoning
goes in we’ve got a bowl here I’ve got a
small bunch of coriander here I want to
use the top half for my saucer and this
bottom half the stalks so they go in
beautiful and then the leaves are gonna
go in my funky little saucer
I’m gonna take some chilies coriander
goes in then we’re going to go in with
the cuse of one line that a little swig
of olive oil black beans are actually
the highest protein beans that you can
get 400 mils of water I’m gonna use a
little hand blender and just blitz up
and then I want it to be on a gentle
heat and then we’re gonna go in with our
eggs
we’ve got tortillas let’s serve it up
this wonderful hearty dish there’s your
egg just like that yes next up we’re
gonna make the most amazing curry cooked
by Monica who celebrates veggies and
paneer which is so so good so I’ve got a
heavy bottomed pan on medium heat I’m
going to add a little bit of oil to that
teaspoon of cumin seeds slice my medium
onion and while those are frying away
I’m going to just slice two cloves of
garlic at this stage I’m going to add
the spices a pinch of turmeric tea spoon
of kashmiri chilli powder nice heaped
teaspoon of coriander powder I’ve got
some sharpen in here it’s almost like
halloumi chop of the funny roughly I’ve
also got my pepper it gives a lovely
crunch to the dish I’m going to add one
small tomato to it as well an inch piece
of fresh ginger a bit of lemon juice
to squeeze on top and some fresh
coriander so it’s done you can see the
phanie is nice and soft so that’s your
paneer jalfrezi complete and ready to
serve the next recipe is an absolute
stonker baked aubergine parmigiana made
by the one and only Gennaro Contaldo
why am i cooking so good you want a
whole audience then you need garlic
pre-spring obrigado you need about 4
tbsp of olive oil 2 chainz
of chopped tomato yes let’s give him a
little splash of white wine vinegar
little salt black pepper and basil yeah
a slice and a great three large orbitons
just a little bit so something right
some nice parmigiana just a little bit
gonna put a little sauce okay now I said
breadcrumb I’m gonna dress a little
touch of olive oil now you’re gonna put
them in the oven so it is ready now look
at her no delay so good next up we’ve
got a beautiful recipe by my mate
Michaela pepper she’s doing a fantastic
veggie frittata delicious now it starts
with whatever roasted veggies are using
whether it’s potato sweet potato parsnip
carrot even nice handful in your pan
give them a bit of a mash with a fall
I’m now gonna crack two eggs now we’re
just gonna mix those yolks turn the heat
on that so it starts cooking and on top
of that I’m gonna sprinkle some kale all
you need to do this it’s just
so you can see they’re really really
really finely blitz just pop a
tablespoon or so of this and just
sprinkle it on the top just gives
gorgeous color meal for all the family
next up Carrie Anne is going to do a
beautiful mac and cheese
classic simple comfort food first we
need a kilo of macaroni pasta and now
I’ve got a nice medium sized pan at the
hundred grams of unsalted butter we are
going to make a white sauce otherwise
known as a bechamel sauce 100 grams of
plain flour now we’re gonna add some
milk see so it looks almost like a dough
I swapped from a wooden spoon to a width
and a bit more milk we add the milk
gradually because if you put it all in
and once you won’t get the chance to
beat it into the flour and then you will
end up with lumps two tablespoons of
English mustard I want to add a nice
generous pinch of salt and a nice
generous pinch of pepper freshly ground
nutmeg add 500 grams of mature cheddar
so what we want to do is wanna whisk in
this cheese to melt it into the sauce
let’s get some pasta in with the cheese
sauce so we’re gonna pour this into the
tray of great need some more cheese onto
the board sprinkle that over the top and
then we need a great big handful of
stale bread crumbs Chuck this in the
oven
look at that can you see you guys we’ve
got all the creamy goo
underneath and then you’ve got the
crispy crummy cheesy bit at the top of
cooking so there you go guys five
beautiful veggie recipes that are really
