hello you lovely people one of the
favorite proteins of choice around the
world I’m gonna give you five things to
do with the glorious beef to prove that
turkey isn’t the only meat for Christmas
beef can be as well you’re going to love
this beautiful glazed beef ribs with an
amazing slaw this guy’s is one of my
ones I think you’re gonna like it
so I’ve got two beef short ribs right
here season it with some salt and a
really generous seasoning of pepper so
what I want to do is have a closed
environment and then we’re going to
whack this in the oven for about eight
hours check this out the meat has kind
of shrunk back off the bones you’ve got
the most incredible light roast beef
juice get your pan on for 180
milliliters of ketchup dark stout four
teaspoons of mustard four teaspoons of
malt vinegar four tablespoons of
Worcestershire sauce four teaspoons of
golden syrup so we’ll turn that heat off
put it over top in and around all I need
to do now is pop this back in the oven
next time you see me I won’t have a
jumper because I’m really really hot
whoa okay that’s a little bit cooler
it’s literally like cutting through
butter
look at tender days it’s cheers milk in
your mouth amazing now I’m sure that
tickled your taste buds but the next
recipe is awesome it’s a fantastic beef
slow-cooked stew Argentinean style this
is an amazing recipe cooked by my
argentinian sister felicitous Pizarro
you’re gonna love it so I will cut it
into pieces here I’m using 1 kilo of
Rampton salt pepper good amount of olive
oil
and one garlic which I will crush as we
want the meat to develop a crust don’t
touch it because that crust it’s amazing
half a glass of wine now add 1 chopped
onion 1 chopped red bell pepper 1 spring
onion 2 already peeled tomatoes pumpkin
bigger sized carrot bigger slices corn
wheels good now it’s time for the
seasoning so add salt pepper red ground
pepper paprika oregano I will add tomato
sauce 300 grams 6 cups of stock leave it
alone for 2 and a half hours look at

and potatoes last but not least inside
my stew and when they are ready my stew
is ready take spoon take your pot and

doing an incredible beef salad oriental
style um believe so I’ve got some
kohlrabi and some carrot and then I’ve
taken 100 grams of caster sugar 100
milliliters of white wine vinegar and
pickled them for an hour ok now we got
the ribeye so what I’m gonna do to them
a little bit of vegetable oil
I’m just greasing the beef so you don’t
pour extra oil into the pan now I’ve got
some five-spice and I’m just gonna
lightly dust it over the ribeye right
I’m gonna pick this bad boy and drop him
straight in okay that guy’s ready he’s
at about 2 minutes on either side is
going to take him off put him on some
clean greaseproof let’s get the salad
ready
so radish let’s finally slice these Thai
red shallots Thai basil mint and
coriander 1 red chili and then we got
the bean sprouts that’s all the salad
done now it’s make the dressing I want a
teaspoon of garlic puree one lime a
table
boon of Mirim a teaspoon of fish sauce
and then a tablespoon of vegetable oil
now let’s get the rest of the salad in
there okay now the beef is sat there for
about two or three minutes and now we’re
gonna slice into it

oh my god how amazing does that look in
this next recipe we’re mixing up meat
and Gizzi Erskine has got a brilliant
recipe for meatballs yes she does an
amazing job you go check out these
meatballs that’s so good
just some olive oil into the pan some
rosemary and some fresh thyme we have
some minced beef and some minced pork
and I’m actually gonna really heavily
season this with salt then pepper as
well just shape them into meatballs I’m
gonna go for golf-ball-sized three
onions olive oil hot pan so next
honestly it’s a whole bulb of garlic so
this been going for about 15 minutes and
I’m gonna put in these tomatoes big
tablespoon of tomato puree Wow a
teaspoon of sugar
these have been resting in the fridge
for an hour while the sauce has been
cooking I’m gonna pour our sauce into
here and then let that whizz up and get
smooth pop in a whole load of basil so
meatballs hot pan ready to go all right
so we’re just gonna lay these up I’m
gonna get this bastard I will holding
their shape now and they can go into our
gravy fresh Tahlia telly tongs are a
brilliant thing for when you do pasta
they just make everything easier
no meatball dish would be finished for
that and Parmesan cheese next up we’ve
got the dumpling sisters yes they’re
doing an amazing beef in oyster sauce
Asian style it’s gonna be amazing you’re
gonna love it
what we’ve got here is a rump steak but
you can use whichever cut you like
because we’ll be tenderizing it later
the marinade for this beef is a really
classic Cantonese one and we’ll start
off of the more straightforward
ingredients
a pinch of salt half a teaspoon of
granulated sugar half a tablespoon of
vegetable oil and three tablespoons of
water first all we have bicarbonate of
soda just half a teaspoon next we have
corn flour one and a half tablespoons of
this lastly we have shall sing rice wine
1 tablespoon 1 tablespoon of finely
diced ginger so on each do now is just
give it a good mix stinkbug hold cling
film and loot and marinate in the fridge
for at least an hour we’re going to
start cooking by putting in one and a
half tablespoons of vegetable oil over a
high heat then n go is 1 clove of garlic
and 2 teaspoons of diced up ginger now
in goes the beef add in the broccoli
along with 2 tablespoons of oyster sauce
and stir through to college and finish
off our stir fry it make it really saucy
we’re going to add in a corn flour
slurry 1 TSP of corn flour mixed in with
5 tablespoons of euchre look at how lush
that look so there you go guys I hope
