here’s our beautiful steak let it rest
for two minutes that’s just enough time
for us to clean out our pan I’m gonna
put this back on the heat there’s a
beautiful dish that I love from Italy
called a bet they sell paratha the
spirit of a dish is embracing greens any
greens so this is charge the French call
it BLET we’ve got the lovely leaves here
these only need a minutes cooking the
stalks here they probably need a little
bit more so I’ve got some boiling water
I’m going to cut the stalks into the
water salted boiling water I’m going to
go in with some olive oil and this still
has a few little kind of sticky residues
in the pan I’m gonna go in without our
garlic here that I rubbed the steak with
for one or two garlic cloves finely
slice this the stalks need a couple of
minutes
great they bed there now we’re gonna go
in with the actual Swiss chard that only
needs 40 seconds really to sort of
soften it up I’m now gonna go into the
pan with that garlic here I’m gonna go
in with some chili you can see a little
bit of color going on to the garlic I’m
taking the greens in let some walk come
in with it I was shown this by a lovely
old Nonna
the Italians amongst Greeks Turkish and
Spanish are just wonderful at making
humble greens delicious mostly what she
was doing was just herbes
okay so I’ve slightly embellished this
recipe but she did put some Swiss chard
in there as well dandelions going in
being a Nettles
I mean there’s a bit of an unusual thing
for a lot of people to want to eat but
these are things that our ancestors
would have eaten loads of I’ve got some
wild garlic here which is very nice you
can just tear that in I mean how
exciting is that gonna be beautiful
spinach
and then these stalks here they’ve had a
little bit more of a battering now in
the water just chuck them over here look
at the color gorgeous let’s take a
little nubber bow put it in the corner
here I’m gonna pick in some marjoram
marjoram oregano thyme or winter or
summer savory these are all wonderful
herbs they will transform humble little
greens into something wonderful
brilliant little recipe have a taste
turn that off you can either put a nice
little squeeze of lemon juice in or it’s
particularly good with balsamic vinegar
bitter and sweet works really really
well
beautiful phrase world greens lots of
