Super Simple Chocolate and Pears | Jamie Oliver | #QuickandEasyFood


yes boozy chocolate pears with vanilla
ice cream and nuts happy days gone so we
are gonna make the most delicious
dessert that’s quick and easy and using
five ingredients that work really really
hard guys this is a dessert that you can
make if people turn up and you’ve got
nothing planned it’s a texture and
flavor extravaganza crunchy crunchy bits
of nuts warm pears silky soft melting
ice cream that’s cold a hot sauce
gorgeous this is from my new book quick
and easy five ingredient food it’s
really really simple the five
ingredients we’re celebrating today
start off with beautiful hazelnuts that
by luck happened to be best friends with
mr. chocolate which also happen to love
vanilla ice cream and then pears tinned
fruit is really underrated and then the
fifth ingredient a nice little bit of
Armagnac but you could use brandy
whiskey or any spirit that you really
love that works well with chocolate so
guys we’re gonna use a pan get that on a
high heat we’re going to toast the
hazelnuts a nice little handful and
we’re just gonna toast them lightly as
that pan warmed up to really accentuate
the beautiful flavors it smells
incredible and I’m just going to simply
put those in a pestle and mortar to cool
down what I try and do is buy poached or
tinned or jarred fruits that aren’t kind
of just rammed full of sugar syrup right
in the hot pan we’re going to go in with
these beautiful pears and the liquid and
then a little PIP put the lid that’s
sharp in the tin before you squeeze it
up and recycle of course turn the pears
over even though this is natural juices
it’s not so heavily sugared there’s
natural sugar in that juice and the
pears and we’re just going to take it
down down down until it’s nice and
sticky

well that’s reducing we can pound up
these nuts you want it to be like a
little powder okay and when you eat that
with the pear and the sauce the
chocolate sauce oh it’s gonna be amazing
so back in the pan
you can see that reducing quite quickly
and the bubbles kind of getting smaller
and smaller and that will become a
lovely syrup and if we carried on kind
of cooking it will become a caramel and
caramelize but I wouldn’t add beautiful
Armagnac couple of shots in there and
all the pan safely and flame that what
you’re doing is cooking away the alcohol
really concentrating it the beautiful
flavors it’s so quick we’re ready
actually to plate up right now I’m gonna
do four portions take some of that
gorgeous pounded up nuts and make a
little pile and that is like a little
resting place for your ice cream
next up the pears gorgeous get your
chocolate this is 70% cocoa solids right
give it a spank so 50 grams goes in it’s
off the heat and we’re gonna use the
residual heat can you see how it’s
starting to melt it move your chocolate
around and of course in there is still
the Armagnac and the pear juices if by
any chance is a little thick take a
little vanilla ice cream and melt it in
the chocolate sauce just to thin it out
really nice you want it to be shiny and
oozy and spoon herbal now a vanilla ice
cream straight onto your nuts what I
like to do is take some of that
chocolate and fill up that little hole
in the pear and now I’m just getting
carried away
it’s an unexpected Beauty out of
cupboard staples it’s quick its five
ingredients enough talking let’s try
some come on does it hit the spot yes
the fruit is delicious and of course
that sweetness and light sourness that
go for the chocolate is so good the
softness and milkiness of the ice cream
with the nuts is another level what are
