we are in Scotland very exciting we’re
driving through Aberdeen to my
restaurant it’s quite a nice day because
we’ve got all of the general managers
and head chefs from the northern James
Italian restaurants and there are sort
of certain things that change you know
we’ll always try and get fish from local
suppliers in that area and meet and you
know there’s differences there’s sort of
little cultural differences so very very
exciting to get all those people in one
place at one time give them a bit of
love I’m gonna have some lunch also with
some of the sort of rising stars of the
northern restaurants so these are people
that are coming in and being promoted
doing really well sort of getting it
inspiring their teammates so that’s
always really nice because they kind of
represent the future we’ve got new menu
in two weeks so we have to trade it in
get them to love it get them good at it
so that’s very exciting really really
exciting and of course and the weather
is changing in Great Britain and it’s
getting cold and the leaves are just
about to fall off the tree which means
it’s squash time and mushroom time and
people want a little bit more comfort so
it’s a kind of
is the beginning of a really exciting
sort of culinary season and Christmas
change every single day you know there’s
a lot involved in running the restaurant
there’s about generally about 90 to 120
staff in each pressure
and
people are sitting on the chefs at 4,000
staff throughout 4000 restaurants from
Aberdeen all the way down to Bristol
Exeter so yeah it’s amazing it’s amazing
so grateful
and it’s always a lovely moment of
reflection just so you know the energy
and they put in so these guys today some
of my heroes from other restaurants up
north you know people coming up you know
not management sort of people being
promoted from within so me really nice
so spend a lot of time with these guys
there was serious stuff now over there
food inspiration stuff but I’ll go back
to London now it’s been a great day and
